Butter Bean Patties

These patties are so quick and easy, and are always a perfect option if you’re not in the mood to be in the kitchen for too long. It involves a little grating, chopping, squishing, mixing, lightly frying or baking, and that’s pretty much it.

I’ve been using this recipe for so long now, and the great thing about it is that it is quite versatile, so you can pretty much throw in what you like. 

I find that Butter Beans give the patties a nice creaminess, and the little bursts of sweetness from the corn are amazing! It’s great for hiding veggies for those fussy folk, like the baby marrow/courgette, which you can hardly taste. In this particular recipe I used Chia seeds and an egg to bind them, but mainly to add extra protein and fiber from the Chia, but you’re more than welcome to turn them into Vegan friendly burgers by using 2 ‘Cheggs‘(Chia Eggs), and leaving out the chicken egg. There’s load of protein from the butter beans, and low GI carbohydrates which will ensure a gradual sustained rise in blood glucose, keeping you fuller for longer.

Ingredients
  1. 1 can Butter Beans (Drained and rinsed well) - crushed with a fork
  2. 1/2 can Whole Corn - Drained and rinsed well
  3. 2 small Carrots - Grated
  4. 3 small Baby Marrows/Courgettes - Grated
  5. 1 'Chegg' - Chia Egg (1 TBS Chia Seeds to 3 TBS water)
  6. 1 Egg
  7. 1 TBS Nutritional Yeast
  8. 1 TBS Buckwheat flour
  9. 1 Slice of low GI Gluten Free health bread - toasted and crushed into crumbs
  10. 1 Tsp Crushed Garlic
  11. Paprika
  12. Salt and Pepper
  13. Mixed Herbs
  14. Coconut Oil to fry
  15. Salad
  16. Fresh Rocket
  17. Sliced Cucumber
  18. Beetroot
Instructions
  1. Add all ingredients into a bowl and mix well
  2. Mold into patties and allow to set in the fridge
  3. Lightly fry the patties in the coconut oil, until golden brown on either side or bake in the oven for about 15-20 mins at 180 degrees until golden brown.
  4. Serve with side salad

    these came out GREAT!!!! i used what i had, a top from an organic V hamburger bun instead of the GF bread and didn’t toast it, just crumbled it. this recipe made about a dozen patties. i used a ring to form uniform ones. i also found dusting them with a bit of flour before introducing them to the hot pan helped.
