Cashew Vegan Cream Cheese

Nick generously gifted me a Mad Millie Vegan Cheese Kit for Christmas, which I finally got around to trying out. I’ve dabbled in a few vegan cheese recipes in the past, but mainly being cheese sauces and my macadamia cheese. I was super keen to test out a ‘proper’ vegan cheese recipe and so this Cashew Vegan Cream Cheese was the result.

Before changing my diet and lifestyle, I did eat regular dairy cheese – however I never sincerely missed it when I decided to cut it from my diet. I experimented with a few ‘nut’ cheeses but very rarely would make them – unless it was a cashew cheese sauce for pasta (because winter in New Zealand basically means comfort food). Continue reading

Pelorus Bridge Camping Adventure

While I love sharing my healthy recipes on the blog, I also like to share tidbits of my life including the beautiful places we adventure to. This week I wanted to share our recent camping adventure to Pelorus Bridge Scenic Reserve. Taking photographs of the delicious recipes created for this blog is so rewarding. However, I also have so much fun capturing the beauty of nature, especially in this magical country.

For this getaway, I decided to bring the camera with and collect a couple of images of our various walks around the area. It was a glorious and hot summers day, and there was heaps of visitors at the Pelorus Bridge jumping off the rocks and swimming below. The sense of excitement immediately evolved, as I recalled childhood memories of playing and tubing down rivers with friends. Continue reading

Vegan Caramel Squares with Activated Buckinis

Living simplistically can be so rewarding. More and more of us are making the conscious effort to reduce waste, buy less, save more and ultimately live more simply.  There’s so many little things we can do, that can really add up in a big way.

Change in the minority, I believe, can have a massive ripple effect and if we all work hard together to spread the word, the benefits for our future generations and our planet will surely come into fruition.

I was inspired this week, by simple living, and hence decided to make a simple recipe, with simple ingredients, that tasted simply wonderful. I succeeded, and this Vegan Caramel Squares with Activated Buckinis recipe was the result.  Continue reading

Vegan Sweet Potato Frittata + VIDEO

The summer months are here in the Southern Hemisphere, the days are long and warm. An abundance of Vitamin D has definitely had an impact on my overall health and wellness right now! I definitely thrive in warm weather.
