Pumpkin Millet Kale Salad with Balsamic Reduction

I love seasonal eating. I love the abundance of locally grown food that is at it’s peak supply. Happy farmers, happy consumers and happy wallets. While it’s saddening that avocado’s are nearly triple their usual price, bright and beautiful pumpkin is bountiful. Vibrantly golden, this wholesome and nutritionally dense vegetable is just what I feel my body needs in these cooler winter months.

    Green Goddess Bowl (Vegan)

I am a woman. I am empowered and proud of who I am. Integrity, values and ambition. A Goddess. Goddess. That word alone gives me butterflies in my tummy, and adds to my feelings of empowerment. I believe it is so important to be in touch with your true self, be you a man or a woman. It’s important for us to connect to our divinity and exude our souls. And what better way to portray our sanctity than with food.  Wholesome, nourishing, beautiful and empowering food. Food that lights up each of our cells and makes us beam from within. Food that makes us feel amazing and godlike. Full…

Zucchini Noodles with a Red Onion Leek and Avocado Sauce

The Spiralizer! One kitchen gadget that makes making food seriously fun! When I was still in South Africa, my best friends bought me one for my birthday and I used it nearly every week. Now that I’ve managed to get my hands on one again (thanks my love πŸ˜‰ and awesome 1-day.com deals) I’ve been creating Zucchini noodles and ‘noodling’ all week!  I think it’s such a great way to get more nutrient dense raw vegetables into your diet. Granted you can cook the noodles to give more of a pasta ‘feel’, but eating them raw is just as great, if not better!

Rice Noodle Salad with Pineapple Thyme Dressing

Although Winter is inevitably on it’s way, and actually should be here already, I thought it a good idea to squeeze out one last salad recipe. A ‘farewell to Summer’ recipe as you may, and this one is yummy and experiments with different taste combinations. The subtle, dry aroma and a slightly minty flavor of the Thyme, blends quite beautifully with the attractive sweet flavour of the pineapple. It’s an odd combination, but it works! and this Rice Noodle Salad with Pineapple Thyme dressing proves that!

Grilled Aubergine with Lemon Basil Drizzle

Whether it’s an accompanied dish to a dinner party, or a light veggie lunch, this Grilled Aubergine recipe with Lemon Basil drizzle will impress and satisfy. Sometimes we don’t feel like a whole lot of food, yet still need some sort of nourishment, and when I’m feeling that way, this is a great option to go for. It’s light and doesn’t have any dense carbohydrates, so although it won’t pack a massive amount of energy, it will nourish and help one from skipping a meal when one is not feeling too hungry. The flavors are scrumptious, and the vibrant Lemon Basil drizzle really compliments the charred aubergine well.

    Marinated Tempeh Salad

Prior to moving to New Zealand, I had never tasted Tempeh before. I’d heard of it, but never really knew what it was. All I knew was that it was foreign and really hard to come by in KZN, South Africa. Well, to be honest, I hadn’t really ever searched for it before, so that previous sentence could possibly be inaccurate. Anyway, upon moving to a new exciting country, came along a lot of exciting new foods, and Tempeh has been one of them.

    Spring Detox Salad

And that’s that! We did it! We survived our first New Zealand Winter! I thought it was never going to end! Winter is nice, but I much prefer the warmer weather! As Winter slowly dissipates, we welcome Spring with wide open arms! This time of year is the best! The warm jasmine scented air, the energizing sunshine, and the hustle and bustle of all those who are slowly coming out of hibernation. I love it! It’s such a clean, fresh time of year, and what better a time for nourishing light meals, like this Spring Detox Salad.

    Fennel and Brown Rice Salad

This fennel salad is so easy to throw together and would be a great idea to use up brown rice from the night before. I don’t know about you guys, but I’m ALWAYS cooking too much rice. Can never get the quantity spot on, not that I’m complaining of course, or else I wouldn’t have come up with this tasty recipe! The fennel really gives a great, strong flavor to the dish, and compliments the surrounding flavors. With so many nutritional benefits, this is a pretty complete dish, and one that’ll tick all the boxes. Nutrition – Check! Flavor – Check! Quick & Easy – Check! If you’re a lover of…

    Marinated Kale and Mushroom Salad

So this recipe is the perfect way to pump up the alkalinity in your diet, with help from one of my biggest friends in the business, Kale. With kale being a primary ingredient, your assured to get a blast of nutrients from this powerhouse green leafy vegetable. I LOVE the fact that it’s pretty simply, and that you kinda get involved with the kale πŸ˜‰  Now kale can be tricky to work with, as it’s quite a hardy vegetable. That is why this recipe calls for marinating your kale, allowing it to soften so that you end up with this delicious end result.
