Lemon Honey Chia Bliss Balls

I had a moment the other day, wondering how many bliss ball recipes there must be floating around the internet these days. Quite a few I’d like to think, but what’s one more to add to the mix?

They’re great to have on hand for a quick snack and to keep those blood sugars and energy levels sustained.

Keep them in the freezer and they’ll last for ages. Little bite size morsels of goodness they are, and this week I’m sharing a delicious Lemon Honey Chia Bliss Ball recipe on the blog.

Benefits of Chia Seeds

Chia seeds contain up to 40 percent oil, with 60 percent comprised of omega-3. ALA is considered essential because your body can’t make it, so you need it in your diet—or its long-chain animal-based derivatives (like the omega-3 found in seafood and krill oil).

It’s thought that the combination of fiber and protein in chia seeds, along with the gel-like texture it takes on when combined with liquid, contributes to feelings of fullness and satiety.

In a recent study, among people with type 2 diabetes, supplementing with chia seeds for 12 weeks resulted in reduced systolic blood pressure and significant decreases in A1C, a measure of a person’s average levels of blood glucose.

Chia seeds contain about 10 grams of fiber in just two tablespoons. Most people need upwards of 50 grams of fiber per 1,000 calories consumed, but most people get nowhere near this amount. 

Just two tablespoons of chia seeds provide 18 percent of the daily recommended value for calcium, 35 percent for phosphorus, 24 percent of magnesium, and about 50 percent for manganese. These minerals are important for bone health and as reported by SF Gate:

I share with you the recipe below for these scrumptious little balls of goodness. Quick and easy to make and great to store in the fridge or freezer until your next snack attack.

Ingredients
  • 1 TBS White Chia Seeds set aside in a small bowl with 3 tbs water
  • 1 Cup Organic Dessicated Coconut
  • 1/2 Cup Raw Cashews soaked for a few hours (or overnight if you can)
  • 2 TBS Fresh Lemon Juice
  • 1/3 Cup Organic Coconut Flour
  • 2 TBS Organic Coconut Oil melted
  • 4 Tsp Grated Lemon Zest
  • 3-4 TBS Creamed Rata Honey or a locally sourced creamed honey of your choice
Instructions
  1. Soak the chia seeds in water to swell. Mix well so that they don’t clump.

  2. Mix the remaining ingredients in a food processor.

  3. Add the chia seed mix and pulse until all ingredients have combined.

  4. Spoon equal amounts of mixture into the palm of your hands and get rolling. (Handy Hint: Rub some coconut oil into your hands to avoid the mixture sticking)

  5. Once all balls are rolled, allow them to set in the freezer for at least 3 hrs.

  6. Enjoy and store in airtight container in the freezer for up to 10 days - if they last that long.

Use Organic wherever possible. Try to support local growers and small businesses. Remember to take your reusable bags and jars when collecting ingredients from the store.
