Lemon Honey Chia Bliss Balls

Ingredients

  • 1 TBS White Chia Seeds set aside in a small bowl with 3 tbs water
  • 1 Cup Organic Dessicated Coconut
  • 1/2 Cup Raw Cashews soaked for a few hours (or overnight if you can)
  • 2 TBS Fresh Lemon Juice
  • 1/3 Cup Organic Coconut Flour
  • 2 TBS Organic Coconut Oil melted
  • 4 Tsp Grated Lemon Zest
  • 3-4 TBS Creamed Rata Honey or a locally sourced creamed honey of your choice

Instructions

  1. Soak the chia seeds in water to swell. Mix well so that they don’t clump.

  2. Mix the remaining ingredients in a food processor.

  3. Add the chia seed mix and pulse until all ingredients have combined.

  4. Spoon equal amounts of mixture into the palm of your hands and get rolling. (Handy Hint: Rub some coconut oil into your hands to avoid the mixture sticking)

  5. Once all balls are rolled, allow them to set in the freezer for at least 3 hrs.

  6. Enjoy and store in airtight container in the freezer for up to 10 days - if they last that long.
