Soak the chia seeds in water to swell. Mix well so that they don’t clump.
Mix the remaining ingredients in a food processor.
Add the chia seed mix and pulse until all ingredients have combined.
Spoon equal amounts of mixture into the palm of your hands and get rolling. (Handy Hint: Rub some coconut oil into your hands to avoid the mixture sticking)
Once all balls are rolled, allow them to set in the freezer for at least 3 hrs.
Enjoy and store in airtight container in the freezer for up to 10 days - if they last that long.
