Chocolate Protein Cookies – Super Crunchy!

I was on the mission of creating a cookie with the perfect amount of crunch! I think, when it comes to cookies, you’re either a soft gooey or crunchy type. Me being the latter!

So this Chocolate Protein Cookie recipe is one tried and tested and I’m just obsessed with it!

So very crunchy and full of protein which is great for balancing blood sugars, and being a Type 1 Diabetic – this is super important to me.

This recipe does contain egg – so it’s not vegan. I am no longer vegan, and if you’d like to find out more about why I decided to stop eating fully vegan – do get in touch.

So it’s the egg in this recipe that helps to form the super crunchy texture that I was striving for. I definitely succeeded.

It’s a quick and easy recipe, and best to be made in small batches because by day two the crunch does tend to ‘fade’. The batches I make can never last that long anyway! So why the decision to include egg in this recipe?

Well, from the hours of research I’ve been doing to help try heal my thyroid – egg can actually be an incredibly healing food.

A Tidbit on Eggs

Many diets state egg should be avoided, but I do believe this is a personal choice. If you find that eggs don’t agree with you – then by all means, exclude them from your diet. I find that eggs are great! I don’t feel negatively affected by eggs when I consume them, so hence adding them into this recipe.

“As a source of protein, eggs are far less expensive than other animal sources. Each egg contains 6 grams of complete protein (including all 9 essential amino acids).

The nutrient profile in eggs is very complete. This allows the body to absorb and use many of these nutrients more efficiently. For instance, vitamin D found in eggs helps your body absorb calcium (also found in eggs).

Eggs contain many fat-soluble vitamins and a range of other nutrients, including:

Calcium
You’ve probably heard calcium is important for developing strong, healthy bones. It’s also helpful to maintain healthy functioning of your muscles, brain, and nervous system.

Iron
Iron consumption helps prevent anemia and assists in hemoglobin function. This allows oxygen to flow through the bloodstream.

Selenium
Selenium helps support heart health, and is thought to play a role in keeping you sharp and focused.

Potassium
Potassium helps support healthy heart and kidney function, as well as playing a role in blood pressure regulation, muscular health, and metabolic support.

Zinc
Zinc helps protect your body from the oxidizing effects of stress. It may also help keep you healthy in the face of seasonal bugs.

Folate
This B vitamin is critical for cellular health.

Lutein and Zeaxanthin
These antioxidants are beneficial to eye health. They protect against the effects of aging on the eyes.”

Ingredients
  • 1 Cup Almond Meal - Organic if possible
  • 4 TBS Coconut Sugar - Organic if possible
  • 4 TBS Raw Cacao Powder - Organic if possible
  • 1/4 Tsp Salt - type of your choice
  • 2 TBS Butter/Ghee/Vegan Butter - melted
  • 2 Egg Whites - sourced locally and ethically
Instructions
  1. Pre-heat oven to 150C (fan forced)

  2. Add the egg whites into a large mixing bowl and whisk lightly.

  3. Add the remaming ingredients.

  4. Stir until all combined.

  5. Evenly space about a large tablespoon of mixture onto a lined baking tray.

  6. Place into the oven at 150C (fan forced) and bake for 10 mins.

  7. Remove from oven at the 10 minute mark and squash each cookie down with a fork. This will help them to bake evenly and create a delicious crunch!.

  8. Continue to bake for a further 10 mins. Total bake time is 20mins.

  9. Remove from oven and allow to cool fully before enjoying.
