Chocolate Caramel Slice – Vegan

This recipe is a decadent Chocolate Caramel Slice that is completely vegan and plant based. It is refined sugar free, however still quite sweet, so definitely a treat to be consumed in moderation.

These slices are rich, very satisfying and definitely test all self control boundaries. Keep them in the freezer, and allow to thaw for about 5 minutes before serving. They’re the perfect quarantine/lockdown indulgence. 

The Current Worldwide Situation

I wanted to also address the current situation that we all find ourselves in, the global pandemic that is currently unfolding. I am far too sensitive to discuss the distressing matter on this platform – a platform that’s aimed to share healthy recipes, lifestyle tidbits and fun travel blogs.

Please do not get me wrong in thinking that the matter does not concern me, because it is in fact very uncertain and stressful times for most of us! But after loosing my father and father in-law at the end of last year, in the short space of 3 months – I am still healing from the immensely painful heartbreak. Life just seems surreal to be honest. 

While I am a human, I am also a Virgo – and I am grounded yet adaptable. I like my routines – so am quite happy to make new ones while creating my new normal.

I have put up some boundaries and developed some new habits – an important one being to instantly stop myself when my mind begins to worry, stress or think about anything other than the current moment. And this new habit, is helping so much!

I put up that wall instantly before my mind wonders and get’s carried away. Ultimately, I am in control of what I can control and that is currently my thoughts. Steering well clear of the news is also top of those newly set boundaries. 

Chocolate Caramel Slice

Back to this beautiful and delicious recipe – one that is really so easy! The ingredient that sparked the inspiration for this recipe was the jar of vegan caramel that I found at our local Bin Inn. I’m a sucker for caramel – always have been! And my usual fix is the Vegan Snickers Bar from our local healthy cafe – is it mind blowingly delicious!

When I discovered this said caramel – I instantly knew I wanted to create something, gooey and something decadent! I think I hit the nail on the head with this recipe.

The base is chewy, and rather hard when removed from the freezer – so best to let a slice thaw for about 10 mins before eating. The caramel layer is just delicious! And so easy as it came straight from the jar. A delicious vegan caramel made from coconut milk and coconut sugar! 

The topping is a few melted dark chocolate buttons – or any dark chocolate of your choice! I also love the 90% Lindt dark chocolate, which would equally work well in this recipe.

Ingredients
Base
  • 1 cup Raw Almonds
  • 2 cup Pitted Dates
  • 2 Tsp Organic Coconut Oil - melted
  • 1 pinch Sea Salt
Caramel Layer
  • 1 Jar Vegan Caramel
Chocolate Layer
  • 3/4 Cup Dark Chocolate Buttons - or dark chocolate of your choice
Instructions
Base Layer
  1. Add all ingredients into a high speed food processor. Blend until all combined and sticky.

  2. Remove from food processor and press down into a line baking dish. If you rub a bit of coconut oil onto the spatula or spoon you're using to press down - it'll help not make the mixture stick to it.

Caramel Layer
  1. Layer the caramel onto the base layer and place in the freezer while you melt the chocolate.

Chocolate Layer
  1. Using a bain marie style pot and glass dish, melt the chocolate until runny.

  2. Once runny, remove the base and caramel layered dish from the freezer and spoon over the melted chocolate, evenly spreading it out.

  3. Allow to set overnight in the freezer

  4. Remove from freezer and allow to thaw for at least 20 mins before slicing. Slice into desired sections, and enjoy.

  5. Allow to thaw before consuming onced removed from the freezer.

This recipe really isn’t hard at all, a convenient delectable treat that leans more towards the healthy side. I do hope you enjoy, and do let me know below if you manage to give it a try – or adapt your own version from this.
