Blueberry Chia Pudding
Chia seeds are so awesome! I love them and they’re always a staple in my pantry. There’s just so much you can do with them, and the health benefits are incredible. It’s crazy to think that so much goodness can fit in such a tiny little seed. That’s mother nature for you!
This recipe is so so simple, it’s ridiculous! Now, granted if you’re new to the magical world of chia seeds, the texture is a little different, and for some, takes some getting used to. Once you’ve crossed the texture hurdle, it’s full steam ahead, with so many options and variations to try.
You can have this recipe as a pudding, or for breakfast! That’s the great thing about this lifestyle, so many options and so many delicious foods, suited for any time of day. If you choose to use this recipe for breakfast, a great option is to make it the night before in a mason jar, so it the morning it’s all prepped and ready to go.
For this recipe I used frozen blueberries, because it’s what was on hand, but fresh ones would work great too. I like to always keep some sort of frozen berries in the freezer. It’s such a quick option if you’ve got a hankering for something sweet, so good for you and TOTALLY guilt free π
- 3 TBS Chia Seeds
- 1 Cup Almond Milk
- 1 TBS Agave Nectar (or honey/maple syrup)
- 1 Tsp Vanilla Extract
- 1/2 Cup Forzen Bluberries
- In a mixing bowl, place the chia seeds, almond milk, agave and vanilla. Gently whisk together, ensure no clumping of the chia seeds.
- Slowly they'll begin to absorb the liquid and swell (up to 12 times their size)
- Pour into a bowl or mason jar or glass, and layer with the frozen blueberries
- Garnish with blueberries and enjoy.
