    Creamy Vegan Bolognese

    Slow cooked, aromatic bolognese is one of the ultimate comfort foods. When you’re craving something dense and wholesome, this is a favorite for many! However, for some it can leave the digestive system feeling burdened rather than nourished. So, I decided to put my own twist of this Italian classic, substituting ground beef for lentils, and dense pasta (which is iconic for a bolognese dish) for butternut squash noodles. With the addition of a creamy vegan white sauce, the result was a deeply flavored dish with a creamy twist, all elements complimenting each other perfectly!

    I have been dying to get a waffle maker for ages now, and it finally happened! So you can guess who’s recently been having waffles galore! It’s so nice to experiment and try foods that you wouldn’t normally eat. Though of course these still fall between the lines of being gluten free, refined sugar free, healthy and vegan.     Lemon Poppy Seed Muffins

    With the apparent abundance of lemons this time of year, I’ve been incorporating as much lemon into my diet as possible. Whether it be squeezed freshly over a salad, or juiced and frozen into ice blocks for a refreshing glass of sparkling water. It hasn’t been difficult because I love lemons, and use them so regularly. They’re amazingly good for you, as I’ll discuss a little later on. So, while searching for inspiration, this Lemon Poppy Seed Muffin recipe was created, and I incorporated the ever so delicious Vanilla Cashew Glaze. This creamy sweet concoction paired so well with the zesty lemon muffins ending in a recipe success.

    The Spiralizer! One kitchen gadget that makes making food seriously fun! When I was still in South Africa, my best friends bought me one for my birthday and I used it nearly every week. Now that I’ve managed to get my hands on one again (thanks my love πŸ˜‰ and awesome 1-day.com deals) I’ve been creating Zucchini noodles and ‘noodling’ all week!  I think it’s such a great way to get more nutrient dense raw vegetables into your diet. Granted you can cook the noodles to give more of a pasta ‘feel’, but eating them raw is just as great, if not better!

    There comes a time in our month, week or day that we long for a bit of indulgence. These cravings can be mild or full blown, and when the latter is evident, it’s great to have a healthy decadent option on hand to satisfy those needs. Now, I never quite realized how many delicious options there are when making a healthy refined sugar free treat. The internet has exploded with Instagram pictures that’ll make you literally salivate and that’s just the brunt of it!     Wild Mushroom and Leek Risotto

    In the midst of Winter, one cannot resist complete comfort food! This urge for complete belly euphoria inspired me to create a vegan version of a rather popular dish – Risotto! I cannot believe how great this recipe turned out! As I write this it’s a cold and miserable day outside and all I can think about is having one more forkful of this truly scrumptious meal! The flavors are wildly bold, enlightening each taste bud with every mouthful! This Wild Mushroom and Leek Risotto is most certainly an indulgent winter dish!
