Roasted Brussel Sprouts, Edamame and a Curry Sunflower Seed Sauce

Happy weekend! I’m feeling refreshed, revitalized and inspired after spending yesterday taking care of myself, and spending the morning immersed in nature. This week on the blog, I want to share with you a bit of a different recipe, yet still keeping it simple, nutritious and delicious. This Roasted Brussel Sprout, Edamame and Curry Sunflower Seed dish may have an array of unusual flavors, but I found it quite tasty!

    Oat Crunchie Bars

It’s Easter weekend and I’m slowly slipping into this well awaited break/4 day weekend. I can’t quite believe that we’re a third of the way through the year already, but I’m feeling happy with how this year is shaping out. We have an exciting trip back to South Africa planned in October, which I am so happy about. I cannot wait to see my family and friends. Holiday times can be hard when you’re away from your family and friends, and at times like these I like to reminisce in memories, and this Oat Crunchie Bar recipe in particular was inspired by childhood memories I’ll never forget.

    Lemon and Thyme Tartlets

As the season’s change, and we slip back into our Winter cocoons, I reflect back on to the warmer and longer days. I love this time of year, as it always reminds me how balance is so important in our lives, as well as in nature. While our Summer wasn’t as great as last years, I still am grateful and am looking forward to Winter. While we (in the Southern Hemisphere) transition into this cooler season, colds and flu’s may arise, and these Lemon Thyme Tartlets are just what you need to satisfy your sweet tooth, and keep you on guard for those pesky Winter colds. Using the Artemis Thyme…

    Chocolate Banana Pancakes

Mornings have to be one of my favorite times of the day, especially when they involve pancakes! For the majority of the time, I tend to have easy stuff for breakfast, like smoothies, smoothie bowls, porridge or granola/muesli, but occasionally I’ll sneak in a “treat breakfast”, and recently it was these tasty Chocolate Banana Pancakes. These pancakes are pretty easy to make. It’s just a matter of throwing all the ingredients into your blender or nutribullet, blending and then there you have it – perfect plant based pancake batter, ready to go.

    Grain Free Paleo Granola

There are so many diets or ways of eating out there at the moment, it can be quite over whelming. Which one do I try? How do I know what’s right for me? Where do I start? From vegetarian to paleo. From vegan to celiac to intermittent fasting. There are so many options and so much information which can make transitioning to a healthier lifestyle so daunting. I’d say the ultimate goal is to find peace with your food. Finding a lifestyle and diet that suits you perfectly and not one that leaves you feeling stressed out.

    Creamy Vegan Mushrooms with Spaghetti

A couple of days ago I shared this post on Instagram and Facebook and asked if you’d guys would like the recipe. I got such a great response, so this week I tweaked and created this delicious Creamy Vegan Mushroom recipe that I paired with some delicious Chickpea Spaghetti. Nick and I rarely eat out, which means that we make 99% of our meals at home. This is usually (depending on how I’m feeling) where my creativity tends shines through. I always strive to create something delicious, nutritious and relatively easy. The problem is that lighting at this time of day is not at it’s peak, so unfortunately the majority…

    Sweet Potato Waffle Rostis

Moving to a new country can come with many new things to learn and get used to. New places, new mannerisms and new names. For me, one of those new names is Kumara aka. Sweet Potato. Here in New Zealand, the Kumara is a staple in many diets. Now I also know that sweet potatoes/kumara make up a large portion of most plant based eaters diets too, and there is a number of reasons why. Firstly they are so delicious! They are sweet and when steamed they have that ‘melt in your mouth’ sensation. Sweet potatoes have a lower GI than regular potatoes, which means they won’t spike your sugar…

    Roasted Parsnip Hummus

Chickpeas have to be one of my favorite staples in the kitchen. They’re so handy to have – whether they be dry and stored in a glass jar, soaking over night on the kitchen counter, sprouting in my ceramic colander under a kitchen cloth or organic tinned chickpeas in bpa-free tins, tucked away in the pantry. There’s so many beautiful recipes to make with these little legumes, and they make such delicious additions to simple summer salads to roasted vegetable platters to creamy hummus. A great source of dietary protein, chickpeas are a great addition to any plant based diet. They’re pretty easy to prepare, are loaded with all sorts…
