Well! I’ll start this blog off by saying it’s been a rather intense week! While I’m super excited to share this Vegan Tofu Scramble recipe with you, I’ll give you my brief summary of my experience of the recent earthquake/s. Pupu Springs & Fairwell Spit Adventure
Since moving to New Zealand, our sense of adventure has sky rocketed. With so many outstandingly beautiful places to experience, there’s always a place to go on the weekends. So that’s what we like to do. Adventure off, into the distance. With the sunroof open and the sun shining down on us! Wind in our hair and eyes wide open. Experiencing all that this beautiful country has to offer. Pupu Springs & Fairwell Spit was our next destination of choice.

I am such an avid fan of supporting local businesses, and in Nelson, I’m so lucky to have access to an array of beautiful products made locally. From locally picked frozen berries to Organic Apple Cider Vinegar, I make a point of supporting local businesses and reducing my carbon footprint as much as I can. In these modern times I believe every little helps! That brings me to one of my most favorite locally made products, and one that has featured in a number of my published recipes, the ever so popular Pic’s Peanut Butter!

The Hollow – Nelson
I’d been dying to visit the newly opened tea cafΓ©/space in Nelson that everyone was talking about. Since changing my lifestyle and diet, herbal tea’s have become a huge part of my life. I love herbal teas! They’re so refreshing and there’s so much you can do with them. From hot drinks, to cool summer ice teas, to even using them in recipes. So many options!!! Hence my excitement for the new tea cafe/store/gallery/event premises The Hollow. Situated in a sneaky little spot on Nelsons Bridge Street, The Hollow’s warming atmosphere pours out of it’s big black doors.

Cable Bay Adventure
We are so incredibly blessed to live in such an amazing part of this country. New Zealand truly does have beauty that I had never even imagined! Every corner on a road trip leads to even more breathtaking and visually tantalizing areas that really are such a treat for my eyes! I really am so grateful!!!! This adventure to Cable Bay was just that!

Maitai River Adventure
Nick and I decided to go on one of the Edible Walks the Nelson City Council are encouraging people to try. We took a stroll to Branford Park, and walked along the Maitai River. We found a group of fruit trees, but none of them were bearing fruit at this time of year. That didn’t stop our adventure though! We carried on, up the river, and at the bridge turned and made our way back down the opposite side of the Maitai River. If you are in Nelson, I’d highly recommend this walk. It’s a super easy walk and so incredible beautiful, especially at this time of year.
