Vegan Lemon Coconut Cake
It’s 40 days until our holiday back to South Africa, and I am so excited! Not only am I looking forward to seeing my family and friends, I’m really excited about all the foodie related things about visiting my home country. I’m super keen to visit the new cafes that have popped up since I left in 2014, and can’t wait to munch on all the fruit that you can’t get here in New Zealand. Warming Beetroot Carrot and Ginger Juice
It’s getting really chilly here down in the depths of the Southern Hemisphere, so this week on the blog I’ve decided to share a fresh vegetable juice recipe. This warming carrot, ginger and beetroot juice is just what you need to stay on-top of your health and to limit any nasty colds and flu’s. Lemon Poppy Seed Muffins
With the apparent abundance of lemons this time of year, I’ve been incorporating as much lemon into my diet as possible. So, while searching for inspiration, this Lemon Poppy Seed Muffin recipe was created, and I incorporated the ever so delicious Vanilla Cashew Glaze. This creamy sweet concoction paired so well with the zesty lemon muffins ending in a recipe success.

I don’t often use mint to be perfectly honest, mainly because I seem to forget about it. Does that ever happen to you with certain foods? You’ll forget about them for ages and then one day realize ‘Oh yeah! I forgot about that! I haven’t had that in ages!’ Anyway, I spotted some fresh mint in store and it quickly found it’s way into my shopping basket.

Raw Vegan Lemon & Lime Cheesecake
The world of raw food is so diverse, and really can be so artistic. I often sit scrolling the internet for inspiration, and my mind is often blown at what people can create with raw food. Now I don’t mean raw as in salmonella raw, I mean food that hasn’t been heated over 47degrees C (I think) and no nutrients or natural enzymes of the food have been damaged due to heat. I myself don’t follow a fully raw diet at all. I find what feels good with my body, and my body likes warm foods. I do, although, like to keep between 60% and 80% of my diet raw, which…
