    Coconut Turmeric Porridge

When I was diagnosed with Hyperthyroidism, I delved deep into research. Why, when it felt like I was doing all the right things, was my body behaving contradictory? I’d been eating a clean, whole food plant based diet for the better part of 7 years – why now was everything out of balance?  Autoimmune conditions are tricky, to put things lightly. Just when I thought I’d gotten a grasp on managing and living with Type 1 Diabetes, this whole new chapter in my life opened it’s pages for me. After much contemplation, and not feeling particularly in the mood for blogging, or sharing for that matter, I’m slowly feeling more…

    Green-a-Colada Summer Smoothie

There’s nothing quite as refreshing as an ice cold pineapple flavored smoothie on a hot Summers day. Now throw some alkalizing green goodness into the mix, and viola! A Green-a-Colada Summer Smoothie is created. The perfect summer drink. With the creamy addition of coconut milk, the sweetness of the pineapple is subtly toned down into a perfectly delectable mixture of bold flavors that balance each other out beautifully. You actually can barely taste the Organic Barley Grass powder, which gives this smoothie its gorgeous green hue, as well as it’s super alkalizing and immune boosting benefits.

    Vegan Lemon Coconut Cake

It’s 40 days until our holiday back to South Africa, and I am so excited! Not only am I looking forward to seeing my family and friends, I’m really excited about all the foodie related things about visiting my home country. I’m super keen to visit the new cafes that have popped up since I left in 2014, and can’t wait to munch on all the fruit that you can’t get here in New Zealand. So while my mind is inundated with excitement, I managed to create this delicious Vegan Lemon Coconut Cake recipe that turned out so well. It’s gluten free, low in carbs, high in healthy fats, full…

Chia & Flax Seed Breakfast Bowl

These last few weeks I’ve been mixing up my diet a little, and opting for a more ‘high-fat/low-carb/keto‘ approach. I can honestly say that I’ve felt such a difference in only a short period of time. Initially the whole idea seemed a little out of balance to me. However having done more research into this way of eating (and feeling some the benefits), I’ve been pleasantly surprised.  This Chia & Flax Seed Breakfast Bowl has been my go to breakfast option while testing out this new way of eating. It’s quick, fulling and so easy to make, not to mention versatile in that you can have it cold or warm.

Raspberry and Tahini Puffed Millet Squares + VIDEO

The thing with healthy eating is to be prepared. One way to be prepared is having loads of snacks and healthy treats available to avoid yourself from caving in to unhealthy temptations. That’s why I like to always have ‘ready made’ snacks and treats on hand, to curb those cravings and satisfy them with a healthy alternative that, at the same time, is nourishing my body.  These Raspberry and Tahini Puffed Millet Squares are such a quick snack/treat option that literally are made in one bowl, popped into the freezer overnight to set and that’s it! Slice them into squares once frozen, pop them into a lunchbox, and you have yourself a…

Mango Coconut CHIA Tarts and Summer Mocktails

Is it just me, or is there something so incredibly exciting about new health and wellness products? I walk through the isles of our local Fresh Choice store and am always enticed when I discover a new product on the shelves. Recently there’s been a few popping up and I especially got excited about the launch of CHIA’s new range of gorgeous drinks. Just in time for summer, the lovely CHIA team have release 4 new flavors of their ever popular CHIA range. As you all know, I am super keen on supporting local businesses, and CHIA is definitely one of them! CHIA is a Nelson based company that is…

    Peppermint Matcha Truffles

There is something so divine about chocolate and peppermint. Combined, the two are just such a good pair. These Peppermint Match Truffles were inspired by my recent finding of Organic Pure Pepper Essence, which I grabbed from Organic Foods Nelson. I get a lot of my ingredients and do a fair bit of my food shopping from this store. I love it and I especially love the fact that whenever I walk in there’s always some new and exciting on the shelves.

    Coco-Choc Bounty Tarts

I love everything coconut. From coconut oil to coconut water to freshly cracked whole coconuts! I’m Loco for Coco!!! These delicious Coco-Choc Bounty Tarts have to be one of my favorite recipes! They are so decadent, and the combination of chocolate and coconut is insanely scrumptious! With the added sweet nutty base, these tarts are like the average bounty bars (minus the bad stuff, loaded with good stuff) and taken to a whole other level!

    Feijoa and Coconut Muffins

Experimenting in the kitchen with different fruits can be exciting and challenging. For me, playing with the New Zealand Feijoa fruit has been incredibly fun. Coming from South Africa, I had never ever heard of such fruit, never mind tasting it. So I was ‘over the moon’ excited to try out this cute little odd shaped fruit, especially being someone who loves trying different fruits and vegetables. I instantly fell in love with the flavor, and that was me, hooked πŸ™‚ So you can imagine how happy I was when a lovely friend blessed me with a whole bag full of the funny little fruits, straight off the tree from her…

Coconut Brown Rice Bowl & Avocado a La Creme Dressing

I was so ‘over-the-moon happy’ when I experimented with making this rice dish, as it turned out so damn tasty! If you’re new to healthy eating, you’ll agree that sometimes brown rice can taste a bit bland and husky.  I decided to mix things up a bit and see if I could make brown rice more palatable to those who aren’t used to it. I, myself, absolutely love the taste of brown rice, but I know for some it can be difficult to change and adapt to healthy eating, and so I’m here to make it that much easier for you πŸ™‚ Okay, so the trick with this dish, as you may…
