Salted Peanut Butter Cashew Fudge
I was recently invited to speak at Revolution – Women Empowering Women, which was a charity event in Nelson. The event was in aid of raising funds for the wonderful Whole Lotta Life foundation which was founded by Kristine Paterson in 2013. This foundation aims to provide those diagnosed with cancer between the ages of 20-45yrs a community filled with knowledge, guidance, hope and support.
It aims to give people what they need – a community with support and access to information that’s related to them specifically. This foundation raises funds for retreats where inspiration flows and hope is restored. It’s such a great cause and it was such an honor to be involved.
The evening was full of inspiration and I left feeling more inspired than ever and certainly high on life! I shared my story along with my steps to wellness hoping to plant a couple of seeds π There was an array of wonderful companies that contributed so many lovely gifts for the goodie bags. Pics Peanut Butter being one of them. So a couple days after the event, I stood with 3 Pic’s Slugs in my hands conjuring up a scrumptious healthy recipe, and I came up with this Salted Peanut Butter Cashew Fudge.
Y-U-M!!! This recipe really turned out so well and is so damn easy! It’s a great option to make and store in the freezer, when you need that lil’ something to grab. Rather decadent and with the most gorgeous texture, these little heart shaped fudges are amazing to say the least.
Now, I have been a long devoted fan of Pic’s peanut butter and would agree that it is the tastiest peanut butter in the world and I’m not just saying that ’cause it’s made here in sunny Nelson, NZ. My kitchen shelves are over flowing with empty jars, as I reuse them to store all my nuts, seeds, pulses, flours, and anything really. They’re so handy! TIP – fill the jar with boiling water when empty, leave for a couple minutes and the label will peel off super easy. There’s a secret token on the back too π
Why do I love Peanut Butter?
- Peanut butter keeps me fuller for longer
- It packs a powerful punch of sustainable energy
- It’s full of heart-healthy fats
- It’s usually vegan and gluten free
- It’s a good source of magnesium, which helps to carry calcium and potassium across cell membranes
- It’s full of plant based protein and fibre
- It tastes amazing! Especially Pics π
- Good source of potassium which helps to reduce blood pressure
- Peanut butter actually contains a specific compound that fights the effects of stress – beta-sitosterol
- It’s best eaten straight out of the jar, in my opinion π
- It’s affordable and goes with so much – crackers, toast, porridge, smoothies, treats, desserts, and…….. the list goes on
So be sure to grab yourself some delicious peanut butter and make these fudges quick! You won’t regret it π
- 90g Smooth Peanut Butter
- 25g Cold Pressed Coconut Oil (Melted)
- 2-4 Tsp Rice Malt Syrup
- 2/3 Cup Soakeed Cashew Nuts
- 50ml Almond Milk
- 1/2 Tsp Pink Himalayan Rock Salt
- Simply add all ingredients into a Nutribullet/food processor/blender
- Blend until all combined and smooth
- Spoon this mixture into a plastic bag to create a piping bag
- Using the 'piping bag' method, squeeze the mixture evenly into your mold - I used a silicone heart mold
- Pop into the freezer and, ideally, freeze overnight or for at least 4 hours
- Always use Organic where possible
- Support local businesses where possible
