Quinoa and Kidney Bean Burger Patties

Who doesn’t love tucking into a huge, delicious and satisfying burger? Well these patties are vegan & vegetarian friendly, are super healthy and so so tasty!

Quinoa and Kidney Bean Burger Patties

With only a few ingredients, these patties are great for a tight budget. Surprisingly the ingredients bind really really well (even with no egg or egg substitute), so there’s no fuss of patties falling apart, which, let’s be honest, can sometimes be so annoying!

They pack a powerful protein punch, with plant based protein from the kidney beans, as well as the quinoa.

I have mentioned the brilliant health properties of quinoa before in my  Chickpea Quinoa Salad. Check it out if your interested in all the beneficial properties this South American superfood adds to your plate, you can view that recipe here.

I like to keep my recipes as versatile as possible, so if you aren’t a fan of kidney beans, this recipe will work out just as good with any other type of bean. Butter beans would be a perfect substitute! So many possibilities πŸ™‚

You can choose to leave your burger ‘open’ and load your plate with different side vegetables, or opt for a gluten free bun, or if you’re really feeling adventurous, two big mushrooms would work amazingly!

Ingredients
  1. 1/2 Cup Red Quinoa
  2. 1/2 Cup White Quinoa
  3. 1 Tin Kidney Beans
  4. 1-2 TBS Chickpea Flour
  5. 3 Tsp Tamari Sauce
  6. 1/2 Tsp Minced Garlic
  7. Mixed Herbs
  8. Pepper
  9. Coconut Oil (for cooking)
Instructions
  1. Rinse and drain your quinoa. Add to a pot with 2 cups water and bring to the boil. Allow to simmer for approx. 15-20mins. Now, you want to slightly overcook your quinoa, so it becomes quite sticky. This is what helps bind your burger patties so well.
  2. In a bowl, roughly mash your kidney beans, and combine all ingredients together.
  3. Mold into patties and allow to set in the fridge for about 10 mins or until firm.
  4. Lightly fry the patties in a little coconut oil until evenly golden brown on both sides.
  5. Serve with your choice of salad vegetables and either leave open, with a gluten free bun or two big mushrooms.
Notes
  1. You could also bake these patties in a 180 oven for about 20 mins, or until golden brown, if you are sensitive to fat.
