Homemade Muesli

I have such fond memories of my mom’s homemade muesli when I was growing up. I remember how she used to make a huge batch and store it in this massive square white Tupperware. I remember how she used to, ever so slightly, toast the batch, not to burn it but to give that delicious crunch.

Such fond memories! This inspired me to try re-create her recipe, with a healthy twist. This recipe is particularly great for Diabetics as it is refined sugar free.

I find muesli such a perfect thing to keep in a jar in the cupboard. It’s quick and easy, and each morning you can make it different by adding different fruits. This muesli has the amazing health benefits of:

  • Oats – helps to lower cholesterol and stabilize and sustain sugar levels which is prefect if you’re a Diabetic, like me ๐Ÿ™‚
  • Cinammon – loaded with antioxidants and anti inflammatory properties. It’s also well known for it’s blood sugar lowering effects, another perk for a Diabetic.
  • Apple – high in soluble fiber such as pectin which can help stabilize your blood glucose level. Also great source of phytonutrients.
  • Goiji berries –ย contain all essential amino acids, goji berries also have the highest concentration of protein of any fruit. They are also loaded with vitamin C, contain more carotenoids than any other food, have twenty-one trace minerals, and are high in fiber. Boasting 15 times the amount of iron found in spinach, as well as calcium, zinc, selenium and many other important trace minerals. One of my favorite superfoods.
  • Buckwheat – contains no gluten and is not a grain. It is great for digestion and is a goodย source of high-quality, easily digestible proteins.
  • Pumpkins seeds – high in heart healthy magnesium, and zinc for immune support. Plant base source of omega 3 healthy fats andย may help improve insulin regulation and help prevent diabetic complications by decreasing oxidative stress
  • Pecan Nuts – great source of energy, and are an excellent source of Vitamin E. They also promote bone and teeth health.

This muesli is really great for anyone, but especially diabetics. It is refined sugar free, and is sweetened with the natural sugars the apples. It packs a powerful nutrition punch and is super tasty! Best of all it’s rather easy to make.

Ingredients

  • 2 Cups Organic Rolled Oats
  • 2 Cups Buckinis ( soaked, rinsed and dehydrated buckwheat grouts)
  • 4 Apples
  • 2 Tsp Cinnamon
  • 1/2 Cup Goiji Berries
  • 1/2 Cup Pumpkin Seeds
  • 1/2 Cup Pecan Nuts

Recipe

First you’ll need to peel, core and steam your apples and preheat your oven to 180.

Place the rolled oats and 1 cup of buckinis into a large mixing bowl. Once your apples are steamed, remove and place into a bowl, mash and add the cinnamon. Add this mashed apple and cinnamon mixture into the oats and buckinis.

Mix thoroughly and lay evenly on a lined baking tray. Place into the oven and bake, stirring occasionally, until golden brown. I like to slightly grill the mixture at the end, just to crisp itย up and try replicate that delicious flavor my mom used to get.

Once you’re happy with the mixture remove, add the remaining ingredients and allow to cool.

Serve with your favorite fruit and a dash of nut milk. I like to use banana and nectarines, and drizzle a little agave nectar (diabetic friendly) over the top. If you have a sweeter tooth, you can add maple syrup or raw honey.

Store in an air tight glass jar.
