Apple Cinnamon Quinoa Porridge
Although we’re enveloped in this gorgeous sunny weather, it still can get a bit chilly in the early hours of the morning. There’s nothing better than a warm bowl of nourishing porridge to start the day with, warming the tum and giving you the sustained energy you need to do all the things you need to do before midday. This Apple Cinnamon Quinoa porridge will do just that! Fill you up and keep you going until your mid-morning snack, or even lunch! Pic’s Peanut Butter Factory Tour
I am such an avid fan of supporting local businesses, and in Nelson, I’m so lucky to have access to an array of beautiful products made locally. From locally picked frozen berries to Organic Apple Cider Vinegar, I make a point of supporting local businesses and reducing my carbon footprint as much as I can. In these modern times I believe every little helps! That brings me to one of my most favorite locally made products, and one that has featured in a number of my published recipes, the ever so popular Pic’s Peanut Butter!

Vegan Sushi Rolls
The ‘Sushi train’ has been an undeniable ‘hit’ in mainstream modern society for quite some time now. Over the last decade is has exploded globally, with Sushi restaurants and takes outs popping up all over the place, with local supermarkets jumping on board and stocking the prepacked containers for our ease. Such a delightful finger food (as I still have not mastered the art of chop sticks), and so appealing to the eye, I set out to recreate a healthier vegan version, based along similar principles of the traditional Japanese sushi. I succeeded, with these delicious Vegan Sushi Rolls, which are so easy and are such fun and incredibly tasty to say the…

Cinnamon Spiced Muffin Cookies
As I write this post, I’m finishing off a cup of delicious hot cinnamon spiced tea, that I have recently fallen in love with. I picked some up from The Hollow, Nelson and it’s this tea blend that I used in these cinnamon spiced muffin cookies. The tea has a very strong aroma of cinnamon, spices and cloves. I love this tea for a treat, as it is naturally very sweet, however I’ve found that the cinnamon sorts out any blood sugar fluctuations. Once a pot of this is brewing, you can’t resist scoffing on some sort of delicious treat, and that’s where these ‘muffin cookies’ shine!

Zucchini Banana Bread
I’ve been craving banana bread for quite some time now. I absolutely love it!!! I actually don’t know why it’s taken me so long to make some, but I found some inspiration, and this recipe was born. I wanted to boost the nutritional value of the loaf so, using a zucchini I had already in the fridge, I grated it and added it in. The great thing is that it really doesn’t alter the taste whatsoever. Adding vegetables into baked goodies is a great way to sneak those veggies into those fussy eaters diets π

Spring Detox Salad
And that’s that! We did it! We survived our first New Zealand Winter! I thought it was never going to end! Winter is nice, but I much prefer the warmer weather! As Winter slowly dissipates, we welcome Spring with wide open arms! This time of year is the best! The warm jasmine scented air, the energizing sunshine, and the hustle and bustle of all those who are slowly coming out of hibernation. I love it! It’s such a clean, fresh time of year, and what better a time for nourishing light meals, like this Spring Detox Salad.

Coco-Choc Bounty Tarts
I love everything coconut. From coconut oil to coconut water to freshly cracked whole coconuts! I’m Loco for Coco!!! These delicious Coco-Choc Bounty Tarts have to be one of my favorite recipes! They are so decadent, and the combination of chocolate and coconut is insanely scrumptious! With the added sweet nutty base, these tarts are like the average bounty bars (minus the bad stuff, loaded with good stuff) and taken to a whole other level!

Fennel and Brown Rice Salad
This fennel salad is so easy to throw together and would be a great idea to use up brown rice from the night before. I don’t know about you guys, but I’m ALWAYS cooking too much rice. Can never get the quantity spot on, not that I’m complaining of course, or else I wouldn’t have come up with this tasty recipe! The fennel really gives a great, strong flavor to the dish, and compliments the surrounding flavors. With so many nutritional benefits, this is a pretty complete dish, and one that’ll tick all the boxes. Nutrition – Check! Flavor – Check! Quick & Easy – Check! If you’re a lover of…

Chewy Granola Bars
Granola Bars! Best! Things! Ever! For me, being a Type 1 Diabetic, my sugar levels can sometimes go haywire. There are SO many things that can affect sugar levels. Hormones, periods, exercise (or lack thereof), coffee, insufficient sleep, out of routine meals, stress, and the list goes on and on. Through ups and downs, it can be a real roller coaster. The joys of Type 1!!! For me, sugar lows are the worst, and the scariest as they can drop so low so quickly, and that’s when you need something like these delicious chewy granola bars to pick them back up, and sustain your levels, without causing them to spike.…
