I think, of all the healthy sweet alternatives, dates have to be my number one favorite! My heart is ever so happy when I can get my grubby little paws on delicious Medjool dates, but when not, the regular cheaper dates are just as good! They’re such a versatile ingredient, and can be used in savory and sweet dishes and desserts. They’re also a great staple to have in the cupboard for when you feel like throwing something together to satisfy that sweet craving. These Carrot Date Bites are great to make for those such moments.

Cinnamon Spiced Muffin Cookies
As I write this post, I’m finishing off a cup of delicious hot cinnamon spiced tea, that I have recently fallen in love with. I picked some up from The Hollow, Nelson and it’s this tea blend that I used in these cinnamon spiced muffin cookies. The tea has a very strong aroma of cinnamon, spices and cloves. I love this tea for a treat, as it is naturally very sweet, however I’ve found that the cinnamon sorts out any blood sugar fluctuations. Once a pot of this is brewing, you can’t resist scoffing on some sort of delicious treat, and that’s where these ‘muffin cookies’ shine!

I love everything coconut. From coconut oil to coconut water to freshly cracked whole coconuts! I’m Loco for Coco!!! These delicious Coco-Choc Bounty Tarts have to be one of my favorite recipes! They are so decadent, and the combination of chocolate and coconut is insanely scrumptious! Granola Bars! Best! Things! Ever! For me, being a Type 1 Diabetic, my sugar levels can sometimes go haywire. There are SO many things that can affect sugar levels. Hormones, periods, exercise (or lack thereof), coffee, insufficient sleep, out of routine meals, stress, and the list goes on and on. Through ups and downs, it can be a real roller coaster.
