I was on the mission of creating a cookie with the perfect amount of crunch! I think, when it comes to cookies, you’re either a soft gooey or crunchy type. Me being the latter! So this Chocolate Protein Cookie recipe is one tried and tested and I’m just obsessed with it! So very crunchy and full of protein which is great for balancing blood sugars, and being a Type 1 Diabetic – this is super important to me.

A nutrient dense packet of hemp protein powder was the inspiration behind this blog post and these Cherry Hemp Oat Bars. Whilst browsing the health/gluten free section, my eyes were instantly drawn to this ever-so-exciting-new-product that was staring back at me from the shelves. With hemp gaining more and more momentum, it’s was a ah-ha! moment for me as to how far we’ve come in a small amount of time, with sustainable products like this making their debut on regular supermarket shelves.
