Vegan Cinnamon Waffles
I have been dying to get a waffle maker for ages now, and it finally happened! So you can guess who’s recently been having waffles galore! It’s so nice to experiment and try foods that you wouldn’t normally eat. Though of course these still fall between the lines of being gluten free, refined sugar free, healthy and vegan. Experimenting and creating different dishes, trying new ingredients, and really just having fun with your food can be so rewarding, especially if you know that the food you’re eating is doing your body a whole lot of good (as well as your mind π )

The event was in aid of raising funds for the wonderful Whole Lotta Life foundation which was founded by Kristine Paterson in 2013. This foundation aims to provide those diagnosed with cancer between the ages of 20-45yrs a community filled with knowledge, guidance, hope and support. It aims to give people what they need – a community with support and access to information that’s related to them specifically. Lemon Poppy Seed Muffins
With the apparent abundance of lemons this time of year, I’ve been incorporating as much lemon into my diet as possible. Whether it be squeezed freshly over a salad, or juiced and frozen into ice blocks for a refreshing glass of sparkling water. It hasn’t been difficult because I love lemons, and use them so regularly. They’re amazingly good for you, as I’ll discuss a little later on. So, while searching for inspiration, this Lemon Poppy Seed Muffin recipe was created, and I incorporated the ever so delicious Vanilla Cashew Glaze. This creamy sweet concoction paired so well with the zesty lemon muffins ending in a recipe success.

Peppermint Matcha Truffles
There is something so divine about chocolate and peppermint. Combined, the two are just such a good pair. These Peppermint Match Truffles were inspired by my recent finding of Organic Pure Pepper Essence, which I grabbed from Organic Foods Nelson. I get a lot of my ingredients and do a fair bit of my food shopping from this store. I love it and I especially love the fact that whenever I walk in there’s always some new and exciting on the shelves.
