    Gardens of the World Adventure

    We were hankering for a little adventure, one that was not too far away, but still beautiful and invigorating. We racked our brains (and Google) and decided on Gardens of the World in Hope. As it’s Spring and flowers are in bloom all over, these gardens were sure to have some beautiful images for us to enjoy and capture.

    Marinated Tempeh Salad

    Prior to moving to New Zealand, I had never tasted Tempeh before. I’d heard of it, but never really knew what it was. All I knew was that it was foreign and really hard to come by in KZN, South Africa. Well, to be honest, I hadn’t really ever searched for it before, so that previous sentence could possibly be inaccurate. Anyway, upon moving to a new exciting country, came along a lot of exciting new foods, and Tempeh has been one of them.

    Apple Cinnamon Quinoa Porridge

    Although we’re enveloped in this gorgeous sunny weather, it still can get a bit chilly in the early hours of the morning. There’s nothing better than a warm bowl of nourishing porridge to start the day with, warming the tum and giving you the sustained energy you need to do all the things you need to do before midday. This Apple Cinnamon Quinoa porridge will do just that! Fill you up and keep you going until your mid-morning snack, or even lunch! It consists of a handful of ingredients, and only takes a couple of minutes to make, which is a perfect combination for me!

    Pupu Springs & Fairwell Spit Adventure

    Since moving to New Zealand, our sense of adventure has sky rocketed. With so many outstandingly beautiful places to experience, there’s always a place to go on the weekends. So that’s what we like to do. Adventure off, into the distance. With the sunroof open and the sun shining down on us! Wind in our hair and eyes wide open. Experiencing all that this beautiful country has to offer. Pupu Springs & Fairwell Spit was our next destination of choice.

    I am such an avid fan of supporting local businesses, and in Nelson, I’m so lucky to have access to an array of beautiful products made locally. From locally picked frozen berries to Organic Apple Cider Vinegar, I make a point of supporting local businesses and reducing my carbon footprint as much as I can. In these modern times I believe every little helps!     The ‘Sushi train’ has been an undeniable ‘hit’ in mainstream modern society for quite some time now. Over the last decade is has exploded globally, with Sushi restaurants and takes outs popping up all over the place, with local supermarkets jumping on board and stocking the prepacked containers for our ease.     Cinnamon Spiced Muffin Cookies

    As I write this post, I’m finishing off a cup of delicious hot cinnamon spiced tea, that I have recently fallen in love with. I picked some up from The Hollow, Nelson and it’s this tea blend that I used in these cinnamon spiced muffin cookies. The tea has a very strong aroma of cinnamon, spices and cloves. I love this tea for a treat, as it is naturally very sweet, however I’ve found that the cinnamon sorts out any blood sugar fluctuations. Once a pot of this is brewing, you can’t resist scoffing on some sort of delicious treat, and that’s where these ‘muffin cookies’ shine!

    Zucchini Banana Bread

    I’ve been craving banana bread for quite some time now. I absolutely love it!!! I actually don’t know why it’s taken me so long to make some, but I found some inspiration, and this recipe was born. I wanted to boost the nutritional value of the loaf so, using a zucchini I had already in the fridge, I grated it and added it in. The great thing is that it really doesn’t alter the taste whatsoever. Adding vegetables into baked goodies is a great way to sneak those veggies into those fussy eaters diets πŸ˜‰

    Spring Detox Salad

    And that’s that! We did it! We survived our first New Zealand Winter! I thought it was never going to end! Winter is nice, but I much prefer the warmer weather! As Winter slowly dissipates, we welcome Spring with wide open arms! This time of year is the best! The warm jasmine scented air, the energizing sunshine, and the hustle and bustle of all those who are slowly coming out of hibernation. I love it! It’s such a clean, fresh time of year, and what better a time for nourishing light meals, like this Spring Detox Salad.
