Apple and Raspberry Vegan Galette
It’s that time again for another recipe to share, and what better way to celebrate the beginning of Spring than with a vibrant Apple and Raspberry Vegan Galette. This recipe is so delicious and is the perfect option when entertaining or taking around to a friends place for morning tea.
I decided to use spelt flour as it actually has so any health benefits, even if it does contain gluten. Now I do tend to stay away from gluten, but every now and then I’ll have it in the form of a home made recipe, or something that I know exactly what’s gone into it. Organic spelt flour used in this recipe is an example of this.
Has any one else felt different these last few weeks since the last full moon, possible even since the super moon? I’ve been feeling a sense of deep self appreciation, and have chosen to shy away a bit from social media and the blogosphere. I think it’s likely a phase of self focus and growth, possibly a different level of awareness in myself, but I’ve totally welcomed it. It’s not negative in any way, but rather fluid and neutral. Life is so beautiful how we flow through these different phases and mindsets, and it’s so interesting when we begin to heighten our awareness and introduce mindfulness into our lives – how evident these phases are. I feel right now that so many people are on this spiritual awareness path, even if only significant, but still moving to a deeper sense of ones self. And it’s so beautiful and inspiring!
Iβm other news, life has been busy of late. We had a short, but amazing trip up to Auckland a couple weekends ago. We took the ferry across to Wellington and drove up the the north island. We saw dolphins and one seal as we left the Picton port – what an amazing start to our journey.
The drive was such fun as I hadn’t yet seen that part of the country, not exactly what I had expected, but a pleasant drive non the less. We stayed over in Cambridge in the cutest Air BnB, and found a cafe that served the most delicious almond cappuccino. So much so that we even popped back in on our way back from Auckland for another – yum!
I had to take Nick to see Huka Falls on our way through Taupo because they are one of the most incredible sights I’ve seen of this country so far. The colour of the water and sheer volume that passes through is mind-blowing!
On our way back down to Wellington (where our amazing friends had homemade curry cooking for us) we hit snow through Desert Road as we past Mt Doom/Mordor. It was so surreal as moments before there was blue sky and sunshine. The weather changes so drastically here!
Now back to this delicious recipe. I served a slice of this heavenly galette with delicious creamy locally made organic vanilla coconut yoghurt. It paired beautifully! And would highly recommend serving each slice with a decent dollop of this creamy goodness.
Health Benefits of Spelt
- Digestive Health: The very high content of fiber in spelt means that it facilitates healthy digestion in a major way. Dietary fiber helps to bulk up your stool and move food through the digestive tract, speeding up the absorption of nutrients. Spelt has one of the highest dietary fiber contents of wheat varieties.

- Circulation: The high levels of iron and copper in spelt combine to significantly boost circulation. Iron and copper are essential for the creation of red blood cells, and when RBC production is up, there is increased blood flow throughout the body, which means additional oxygenation to organs and tissues, increased healing, boosted energy levels, and a more functional metabolism.
- Hormonal Regulation and Creation: Niacin is one of the essential vitamins that can be found in significant quantities in spelt. Niacin plays a key role in the adrenal glands in the body, particularly in the production of sex hormones.
- Bone Health: Spelt has an impressive range of essential minerals that are necessary for bone health, including zinc, magnesium, copper, phosphorous, and selenium. These minerals contribute to the development of bone tissue.
- Growth and Development: The high levels of phosphorous, combined with the impressive content of protein in spelt makes this cereal very important for the development and growth of new tissues, blood vessels, muscles, bones, and organs.
- Immune System Health: Thiamin is known to significantly boost your immune system and stimulate the defensive mechanisms of the body, while also easing psychological stress and anxiety. Spelt is one of the few cereals that can boast a significant level of the B-family vitamin.
Despite all of these healthy benefits, spelt does contain gluten, which is the allergen that is responsible for Celiac disease. Therefore, people suffering from this condition should choose other grain/wheat alternatives. Although some with gluten sensitives are able to metabolize spelt with no issues, so best to check with your health care provider.
A delicious vegan dessert recipe that's sure to wow guests or friends at morning tea. Fresh and vibrant and full of flavour. Paired beautifully with vanilla coconut yoghurt.
- 2 Cups Organic Spelt Flour
- 2 TBS Organic Coconut Sugar
- 1/2 Tsp Celtic Salt
- 55 g Organic Cold Pressed Coconut Oil - Solid
- 1/2 Cup Cold water
- 1 1/2 Cup Organic Frozen Raspberries
- 3 TBS Water
- 1 TBS White Organic Chia Seeds
- 1-3 TBS Maple Syrup - depending on how tart you prefer the raspberries, add more syrup for less tartness
- 550 g Apples - thinly sliced - I used Jazz Apples
- 3 TBS Organic Almond Meal

Place all ingredients into a food processor except the water. Pulse a few times.

Turing the processor on continuously, gradually add the cold water. Eventually the mixture will all combine and begin to stick together in one big lump.

Remove mixture from processor and wrap in some cling film and place in the fridge to chill while you tend to the filling.

Pre-heat the oven to 160C fan forced.

In a medium saucepan, add the frozen raspberries, 3 TBS water, chia seeds and maple syrup. On a medium heat allow the mixture to slowly thaw and eventually come to a light boil.

Reduce heat and continue to stir occasionally until the mixture thickens into a chia jam. Once reduced and thickened, remove from heat and allow to stand while you get the apples ready.

Clean your apples, stand each apple up and slice down the centre. Place each half length ways and thinly slice, removing the core/pips.

Remove the pastry from the fridge and on a clean surface, sprinkle a little spelt flour. Roll the pastry out into an uneven circular shape. The rustic ends give the galette character, so don't be too much of a perfectionist.

Once rolled out, place the pastry on a king tray lined with baking paper. Sprinkle the almond meal filling a large circular shape in the centre of the pastry.

Spoon the chia jam over the almond meal. spread evenly.

Evenly lay the sliced apples show in the photographs. Gently fold the sides of the pastry up, starting from the left and working your way clockwise around. You can cut off excess if there is any.

Place into the oven on 160C fan forced for 55 mins, until golden brown and baked through.

Keep a few raspberries out to thaw while the galette bakes, and decorate when out of the oven and cooling.

Serve warm with creamy vanilla coconut yoghurt and enjoy.
