Grilled Aubergine Stack
Iโve decided to start a Throw-Back-Thursday section to my blog, where Iโll post some recipes and other content from โback-in-the-dayโ. Iโve decided to share this recipe with you, which is one of my earliest entries. I love love love aubergines, or as we call them back in South Africa โBringalsโ. They are quite versatile and can be used to make vegetable lasagna, are the main ingredient in the middle eastern baba ganoush, and make perfect additions to any roast vegetable dish.

Quinoa and Kidney Bean Burger Patties
Who doesnโt love tucking into a huge, delicious and satisfying burger? Well these patties are vegan & vegetarian friendly, are super healthy and so so tasty! With only a few ingredients, these patties are great for a tight budget. Surprisingly the ingredients bind really really well (even with no egg or egg substitute), so thereโs no fuss of patties falling apart, which, letโs be honest, can sometimes be so annoying!

Teeccino Herbal Coffee Review
I stumbled across this box of โyummynessโ while browsing our local Green Grocer. I have tried the peppermint flavor before, so I decided to give this hazelnut option a try. Goodness me is it delicious! Lately I have been super conscious of what Iโm putting in my body, and especially of what Iโm consuming and itโs effects on my liver. Now I absolutely love coffee! Donโt get me wrong! Every now and then I do have a cup of the real deal, and yes, I feel the amazing effects of it. After not having coffee for a while, you can really feel the โdrug-likeโ effects that caffeine has on yourโฆ

Pukka Cleanse Herbal Tea Review
This is such a stunning product, I had to do a review on it! From the packaging, to the smell when you open a tea sachet, to the first sip, it is just simply wonderful! I like to start each day with a soothing cup of tea. A warm cup of herbal tea tends to hit the spot! Whether it be green tea, licorice tea, or any herbal blend tea, I find that the soothing flavors of the tea gently nudge my organs into action. As the ingredients are generally super detoxifying, I know my liver is grateful.

Roasted Turmeric Cauliflower and Kale Salad
Cruciferous vegetables play an important role in a plant based diet. They are packed full of nutrients that nourish your body. They are super high in phytochemicals, vitamin A, carotenoids, vitamin C, folic acid, and fiber. Their unusually high content of vitamin C and manganese explain their growing reputation as an antioxidant vegetable group. This salad is a perfect way to combine two powerhouse cruciferous vegetables โ kale and cauliflower. With a slight heat from the cauliflower to compliment the zestyness of the massaged kale, this salad is definitely a winner! Itโs a perfect detox option as itโs quite light, yet super fulling.

Homemade Muesli
I have such fond memories of my momโs homemade muesli when I was growing up. I remember how she used to make a huge batch and store it in this massive square white Tupperware. I remember how she used to, ever so slightly, toast the batch, not to burn it but to give that delicious crunch. Such fond memories! This inspired me to try re-create her recipe, with a healthy twist. This recipe is particularly great for Diabetics as it is refined sugar free.
