I’ve decided to start a Throw-Back-Thursday section to my blog, where I’ll post some recipes and other content from ‘back-in-the-day’. I’ve decided to share this recipe with you, which is one of my earliest entries. I love love love aubergines, or as we call them back in South Africa ‘Bringals’. They are quite versatile and can be used to make vegetable lasagna, are the main ingredient in the middle eastern baba ganoush, and make perfect additions to any roast vegetable dish.

Teeccino Herbal Coffee Review
I stumbled across this box of ‘yummyness’ while browsing our local Green Grocer. I have tried the peppermint flavor before, so I decided to give this hazelnut option a try. Goodness me is it delicious! Lately I have been super conscious of what I’m putting in my body, and especially of what I’m consuming and it’s effects on my liver. Now I absolutely love coffee! Roasted Turmeric Cauliflower and Kale Salad
Cruciferous vegetablesΒ play an important role in aΒ plant based diet. They are packed full of nutrients that nourish your body. They are super high in phytochemicals,Β vitamin A, carotenoids, vitamin C, folic acid, and fiber.Β Their unusually high content of vitamin C and manganese explainΒ their growing reputation as an antioxidant vegetable group. Homemade Muesli
I have such fond memories of my mom’s homemade muesli when I was growing up. I remember how she used to make a huge batch and store it in this massive square white Tupperware. I remember how she used to, ever so slightly, toast the batch, not to burn it but to give that delicious crunch. Such fond memories! This inspired me to try re-create her recipe, with a healthy twist. This recipe is particularly great for Diabetics as it is refined sugar free.
