Ginger & Apple Granola

This recipe is just a slightly updated recipe to my previous Homemade Muesli recipe, which you can find here. I think breakfast has to be one of my favorite meals of the day. I always look forward to it, and this breakfast granola is one of the best!

This recipe has similar ingredients, but with a few tweaked additions. Firstly I added a bunch of fresh grated ginger, which lifts the flavor to high heights. I love the taste of ginger, especially when it’s mixed with cinnamon. Ginger is such a great digestion aid, so it’s perfect to get this in your belly at the beginning of the day.

Next I added more apples, which created more apple sauce. By increasing this, the mixture stuck together more and became even more deliciously crunchy, hence naming it granola, rather than muesli. I also added a bit of coconut oil, which also helped to bind the mixture together, leaving you with a chunky granola texture

Ingredients
  1. 2 Cups Organic Rolled Oats
  2. 2 Cups Buckinis ( soaked, rinsed and dehydrated buckwheat grouts)
  3. 6 Apples (Peeled and steamed)
  4. 4cm Know Ginger (grated)
  5. 2 Tsp Cinnamon (Good quality)
  6. 1/2 Cup Goiji Berries
  7. 1/2 Cup Pumpkin Seeds
  8. 1/2 Cup Raisins
  9. 1 TBS Coconut Oil
Instructions
  1. Peel, core and steam your apples and preheat your oven to 180.
  2. Place rolled oats, buckinis, goiji berries, pumpkin seeds and raisins into a large mixing bowl. Once your apples are steamed, remove and place into a bowl. Mash until smooth and add the cinnamon, ginger, and coconut oil.
  3. Add this wet mixture to the dry ingredients and mix thoroughly.
  4. Lay evenly on a lined baking tray. Place into the oven and bake, stirring occasionally, until golden brown. I like to slightly grill the mixture at the end, just to crisp it up and ensure that golden brown crunch.
  5. Serve with your favorite fruit, in this case it was frozen mixed berries and sliced apple and a dash of nut milk.
  6. If you'd like a sweeter version, drizzle some maple syrup, honey or agave nectar (diabetic friendly).
  7. Store in an air tight glass jar.
