Moving to a new country can come with many new things to learn and get used to. New places, new mannerisms and new names. For me, one of those new names is Kumara aka. Sweet Potato. Here in New Zealand, the Kumara is a staple in many diets. Now I also know that sweet potatoes/kumara make up a large portion of most plant based eaters diets too, and there is a number of reasons why.
Firstly they are so delicious! They are sweet and when steamed they have that ‘melt in your mouth’ sensation. Sweet potatoes have a lower GI than regular potatoes, which means they won’t spike your sugar levels, but rather gradually elevate and sustain them over a period of time. These past few weeks have been so busy, I’m slowly settling back into my normal routine. These Sweet Potato Fries are one of the quick and easy meals/side dishes I’ve been making while being so occupied.
At the end of June I flew to Auckland for training and stayed in the most posh hotel. Truly felt like royalty and the view of the city skyline was incredible.
We then had a friend over from South Africa at the beginning of July and had an amazing three weeks exploring this beautiful country with him. From skiing at Mt Hutt in Christchurch to the incredibly scenic West Coast of the South Island hustle and bustle of Auckland City. We had an amazing time! Continue reading
There comes a time in our month, week or day that we long for a bit of indulgence. These cravings can be mild or full blown, and when the latter is evident, it’s great to have a healthy decadent option on hand to satisfy those needs.
Now, I never quite realized how many delicious options there are when making a healthy refined sugar free treat. The internet has exploded with Instagram pictures that’ll make you literally salivate and that’s just the brunt of it!

I was so ‘over-the-moon happy’ when I experimented with making this rice dish, as it turned out so damn tasty! If you’re new to healthy eating, you’ll agree that sometimes brown rice can taste a bit bland and husky. I decided to mix things up a bit and see if I could make brown rice more palatable to those who aren’t used to it. I, myself, absolutely love the taste of brown rice, but I know for some it can be difficult to change and adapt to healthy eating, and so I’m here to make it that much easier for you 🙂
Okay, so the trick with this dish, as you may have already guessed, is the coconut rice. I achieved this by slowly cooking brown rice with half quantities of water and coconut cream. Granted I did use a rice cooker, but slow cooked on a stove top will also work fine. Continue reading
