The thing with healthy eating is to be prepared. One way to be prepared is having loads of snacks and healthy treats available to avoid yourself from caving in to unhealthy temptations. That’s why I like to always have ‘ready made’ snacks and treats on hand, to curb those cravings and satisfy them with a healthy alternative that, at the same time, is nourishing my body.

It’s Easter weekend and I’m slowly slipping into this well awaited break/4 day weekend. I can’t quite believe that we’re a third of the way through the year already, but I’m feeling happy with how this year is shaping out. We have an exciting trip back to South Africa planned in October, which I am so happy about. I cannot wait to see my family and friends.

Mornings have to be one of my favorite times of the day, especially when they involve pancakes! For the majority of the time, I tend to have easy stuff for breakfast, like smoothies, smoothie bowls, porridge or granola/muesli, but occasionally I’ll sneak in a “treat breakfast”, and recently it was these tasty Chocolate Banana Pancakes.

There are so many diets or ways of eating out there at the moment, it can be quite over whelming. Which one do I try? How do I know what’s right for me? Where do I start? From vegetarian to paleo. From vegan to celiac to intermittent fasting. There are so many options and so much information which can make transitioning to a healthier lifestyle so daunting.

A couple of days ago I shared this post on Instagram and Facebook and asked if you’d guys would like the recipe. I got such a great response, so this week I tweaked and created this delicious Creamy Vegan Mushroom recipe that I paired with some delicious Chickpea Spaghetti. Nick and I rarely eat out, which means that we make 99% of our meals at home. This is usually (depending on how I’m feeling) where my creativity tends shines through.
I always strive to create something delicious, nutritious and relatively easy. Moving to a new country can come with many new things to learn and get used to. New places, new mannerisms and new names. For me, one of those new names is Kumara aka. Sweet Potato. Here in New Zealand, the Kumara is a staple in many diets. Now I also know that sweet potatoes/kumara make up a large portion of most plant based eaters diets too, and there is a number of reasons why.
Firstly they are so delicious! They are sweet and when steamed they have that ‘melt in your mouth’ sensation. Sweet potatoes have a lower GI than regular potatoes, which means they won’t spike your sugar levels, but rather gradually elevate and sustain them over a period of time. This is great for keeping that ‘satisfied’ feeling we get after eating, meaning you’ll have sustained energy levels which is great! Continue reading
Hope you’re all easing into the New Year well. It’s been beautiful weather here in Nelson. The sun’s been shining brightly these last couple days and the cool, refreshing breeze has been a breath of fresh air. I love this time of year, so much! I love getting out on the weekends, going on unknown adventures, and being immersed in nature. The sun kissed glow to the skin is always welcomed.
We met up with a gorgeous friend at the Nelson Saturday Market on the weekend (which was fab), and I stumbled across some deliciously fresh hazelnuts which I just had to have. Now, I must admit, I may have a mild obsession with this particular nut.
