There are so many diets or ways of eating out there at the moment, it can be quite over whelming. Which one do I try? How do I know what’s right for me? Where do I start? From vegetarian to paleo. From vegan to celiac to intermittent fasting. There are so many options and so much information which can make transitioning to a healthier lifestyle so daunting.

Creamy Vegan Mushrooms with Spaghetti

 

A couple of days ago I shared this post on Instagram and Facebook and asked if you’d guys would like the recipe. I got such a great response, so this week I tweaked and created this delicious Creamy Vegan Mushroom recipe that I paired with some delicious Chickpea Spaghetti. Nick and I rarely eat out, which means that we make 99% of our meals at home. This is usually (depending on how I’m feeling) where my creativity tends shines through.

I always strive to create something delicious, nutritious and relatively easy. The problem is that lighting at this time of day is not at it’s peak, so unfortunately the majority of these meals are not ‘Blog worthy’. Sweet Potato Waffle Rostis

Moving to a new country can come with many new things to learn and get used to. New places, new mannerisms and new names. For me, one of those new names is Kumara aka. Sweet Potato. Here in New Zealand, the Kumara is a staple in many diets. Now I also know that sweet potatoes/kumara make up a large portion of most plant based eaters diets too, and there is a number of reasons why.

Firstly they are so delicious! They are sweet and when steamed they have that ‘melt in your mouth’ sensation. Sweet potatoes have a lower GI than regular potatoes, which means they won’t spike your sugar levels, but rather gradually elevate and sustain them over a period of time. This is great for keeping that ‘satisfied’ feeling we get after eating, meaning you’ll have sustained energy levels which is great!  Continue reading

Chocolate Hazelnut Smoothie

Copy of Recipes (1)Hope you’re all easing into the New Year well. It’s been beautiful weather here in Nelson. The sun’s been shining brightly these last couple days and the cool, refreshing breeze has been a breath of fresh air. I love this time of year, so much! I love getting out on the weekends, going on unknown adventures, and being immersed in nature. The sun kissed glow to the skin is always welcomed. 

We met up with a gorgeous friend at the Nelson Saturday Market on the weekend (which was fab), and I stumbled across some deliciously fresh hazelnuts which I just had to have. Now, I must admit, I may have a mild obsession with this particular nut. From hazelnut butter to toasted hazelnuts, to hazelnuts staring in delicious recipes – like this Chocolate Hazelnut Smoothie, I love love love them! Continue reading

I love this time of year! Holidays, summer sunshine and lots of creative juices flowing in the kitchen. There’s always so many awesome Christmas recipes flying around the net this time of year, and I could just burst with all the inspiration everywhere

This year, my Christmas recipe is for these delicious Gingerbread Men Cookies, which just so happens to be refined sugar free and 100% vegan!

I walk through the isles of our local Fresh Choice store and am always enticed when I discover a new product on the shelves. Chocolate Espresso No Bake Brownies

Copy of Recipes (9)Coffee! One of the most popular drinks in the world. Most cannot start a day without it. When I’m out and about I tend to drink decaf, however a shot of caffeine every now and then is okay. I can definitely feel the effects of caffeine, maybe as I’ve become more sensitive to it.

To be honest, I never really feel that great after having a coffee – be it decaf or regular, yet in the moment it always seems like a good idea.

Recently I’ve been cutting out soy from my diet, so I’ve been having my decaf cappi’s with almond milk, which is pretty tasty! Although I still feel rather flat after drinking one, so I don’t have them too regularly.

But here, in this Chocolate Espresso No Bake Brownie recipe, I decided to use full caffeine coffee for the intense flavor. That, and the fact that Nick’s coffee machine makes a pretty darn good espresso! 🙂 Continue reading

Vegan Cinnamon Waffles

Copy of Recipes (8)I have been dying to get a waffle maker for ages now, and it finally happened! So you can guess who’s recently been having waffles galore! It’s so nice to experiment and try foods that you wouldn’t normally eat. Though of course these still fall between the lines of being gluten free, refined sugar free, healthy and vegan.
