I am so excited to share this recipe with you guys, and I had such fun creating it. I find it so amazing how you can create something so decadent, beautiful and delicious with only a handful of ingredients. This recipe is perfect for breakfast and easily prepared the night before or spruce it up for a jaw dropping dessert.
The most exciting part of this recipe was the discovery of the Chocolate Raspberry Mousse. Lately I’ve been feeling rather nostalgic. I’ve been reminiscing old memories and missing my family, friends and home country. It’s now been roughly 17 months since I opened my wings, flew out of Durban South Africa, and nestled into a new life with my love in this beautiful country, New Zealand. I have loved every single step of my journey and am incredibly grateful each and every day. Yet I do think of my ‘people’ back home ALL the time and miss them all so dearly!
So to cheer my spirits I decided to get back to my roots, and create a healthy vegan version of a great South African traditional dessert. It’s wonderful how food is able to have an influence on our feelings, frame of mind and moods. And when it’s a healthy guilt free dessert, it’s even better.

It has been getting rather chilly here in Nelson, New Zealand. Growing up on a farm way out in the Dargle, South Africa, you’d think the cold would have little affect on me. I suppose I’m just a little bit of a wimp these days, brrrrrrr!!!!! Warm baths, comfy PJ’s and lots of cuddles definitely help, but so does a delicious warming meal followed by and even better warming and satisfying healthy dessert. What better way to end of a chilly evening, with a bowl of this delicious apple and sunflower seed crumble!

Chia seeds are so awesome! I love them and they’re always a staple in my pantry. There’s just so much you can do with them, and the health benefits are incredible. It’s crazy to think that so much goodness can fit in such a tiny little seed. That’s mother nature for you!
