Well! I’ll start this blog off by saying it’s been a rather intense week! While I’m super excited to share this Vegan Tofu Scramble recipe with you, I’ll give you my brief summary of my experience of the recent earthquake/s.
If you haven’t heard already, New Zealand had a 7.8 Earthquake at a little past 12am early Monday morning. I awoke abruptly to Nick shaking me and instantly I knew what was going on. The earth was moving. Our whole house was shaking, and so vigorously that the water in the toilet was loudly swishing from side to side. Instant panic mode!
My first instinct was to run outside, yet in my fumbled orientation, I actually didn’t know what to do. And then the electricity went out, all was black, frightening! We experienced one last real jolt, and then it simmered down. We later learnt that the quake went on for around 2mins, which is a freaking long time when you’re in a situation like that. Is it just me, or is there something so incredibly exciting about new health and wellness products?
I walk through the isles of our local Fresh Choice store and am always enticed when I discover a new product on the shelves. Recently there’s been a few popping up and I especially got excited about the launch of CHIA’s new range of gorgeous drinks. Just in time for summer, the lovely CHIA team have release 4 new flavors of their ever popular CHIA range.

We were hankering for a little adventure, one that was not too far away, but still beautiful and invigorating. We racked our brains (and Google) and decided on Gardens of the World in Hope. Since moving to New Zealand, our sense of adventure has sky rocketed. With so many outstandingly beautiful places to experience, there’s always a place to go on the weekends. So that’s what we like to do. Adventure off, into the distance. With the sunroof open and the sun shining down on us! Wind in our hair and eyes wide open. From locally picked frozen berries to Organic Apple Cider Vinegar, I make a point of supporting local businesses and reducing my carbon footprint as much as I can. I’d been dying to visit the newly opened tea café/space in Nelson that everyone was talking about. Since changing my lifestyle and diet, herbal tea’s have become a huge part of my life. I love herbal teas! They’re so refreshing and there’s so much you can do with them. From hot drinks, to cool summer ice teas, to even using them in recipes. So many options!!! Hence my excitement for the new tea cafe/store/gallery/event premises The Hollow.

We are so incredibly blessed to live in such an amazing part of this country. New Zealand truly does have beauty that I had never even imagined!
Every corner on a road trip leads to even more breathtaking and visually tantalizing areas that really are such a treat for my eyes! I really am so grateful!!!! This adventure to Cable Bay was just that!
Nick and I decided to go on one of the Edible Walks the Nelson City Council are encouraging people to try. We took a stroll to Branford Park, and walked along the Maitai River.
We found a group of fruit trees, but none of them were bearing fruit at this time of year. That didn’t stop our adventure though! We carried on, up the river, and at the bridge turned and made our way back down the opposite side of the Maitai River.
If you are in Nelson, I’d highly recommend this walk. It’s a super easy walk and so incredible beautiful, especially at this time of year. Continue reading
