As I write this post, I’m finishing off a cup of delicious hot cinnamon spiced tea, that I have recently fallen in love with. I picked some up from The Hollow, Nelson and it’s this tea blend that I used in these cinnamon spiced muffin cookies. The tea has a very strong aroma of cinnamon, spices and cloves. I love this tea for a treat, as it is naturally very sweet, however I’ve found that the cinnamon sorts out any blood sugar fluctuations. Once a pot of this is brewing, you can’t resist scoffing on some sort of delicious treat, and that’s where these ‘muffin cookies’ shine! Continue reading
I’ve been craving banana bread for quite some time now. I absolutely love it!!! I actually don’t know why it’s taken me so long to make some, but I found some inspiration, and this recipe was born. I wanted to boost the nutritional value of the loaf so, using a zucchini I had already in the fridge, I grated it and added it in. I love everything coconut. From coconut oil to coconut water to freshly cracked whole coconuts! I’m Loco for Coco!!! These delicious Coco-Choc Bounty Tarts have to be one of my favorite recipes! They are so decadent, and the combination of chocolate and coconut is insanely scrumptious! With the added sweet nutty base, these tarts are like the average bounty bars (minus the bad stuff, loaded with good stuff) and taken to a whole other level!
Our lives are busy, and without even realizing it, they are super fast paced. Think about it – where the hell did July go?? In a blink it was gone! So, time fly’s by so quickly, we really need to try and make the most of every moment. The best way to do this is to have high energy levels, so that we have the ability to live our lives to the fullest. I believe that diet and lifestyle play a huge role in sustained energy, and this recipe is definitely one to get those energy levels up (and keep them there) when you need it.
One of the massive things I’ve noticed since I changed my diet and my lifestyle is the huge increase in sustained energy levels. Breakfast has to be one of my favorite meals of the day! And I’ll admit, I am such a creature of habit, and tend to have a handful of breakfast recipes which I juggle and alternate from. Obviously making them each unique with various different toppings, or what ever is in hands reach in the cupboard. Now, in South Africa I used to frequently buy gluten (wheat) free oats, but am battling to find them here in Nelson. I don’t have a gluten sensitivity, but I choose not to eat gluten containing foods often as I know the health implications. That being said my diet is pretty much gluten free, aside from oats (organic) every now and then. This breakfast oats recipe is one of my all time favorites!!!
Oh! My! Goodness! Who knew you could create the most amazing textured, gooey brownies with … wait for it … BLACK BEANS!!!!! It’s insane! But soooooo good!!!! Now I must say, I am definitely one for trying out crazy combinations and crazy ingredients, and this one just hit the nail on the head! This could be, possibly, one of my favorite recipes to date! Yes, it’s that good!
Call me crazy, but I get so excited when I discover new and brilliant uses for simple ingredients, such as black beans. From adding beetroot and other root vegetables to healthy treats, to using frozen bananas to create the most creamiest delicious (dairy free and sugar free) ice cream, to using the water in canned chickpeas for making vegan ‘whipped cream’ seems like total madness, but it works!!!! Experimenting in the kitchen with different fruits can be exciting and challenging. For me, playing with the New Zealand Feijoa fruit has been incredibly fun. Coming from South Africa, I had never ever heard of such fruit, never mind tasting it. So I was ‘over the moon’ excited to try out this cute little odd shaped fruit, especially being someone who loves trying different fruits and vegetables. I instantly fell in love with the flavor, and that was me, hooked 🙂 So you can imagine how happy I was when a lovely friend blessed me with a whole bag full of the funny little fruits, straight off the tree from her friends farm. So incredibly grateful was I!
Having literally zero carbon footprint, and falling into the ‘eat local’ where possible category, I had to put my thinking cap on to decide what I’d make with so many delicious Feijoa’s. The world of raw food is so diverse, and really can be so artistic. I often sit scrolling the internet for inspiration, and my mind is often blown at what people can create with raw food. Now I don’t mean raw as in salmonella raw, I mean food that hasn’t been heated over 47degrees C (I think) and no nutrients or natural enzymes of the food have been damaged due to heat. I myself don’t follow a fully raw diet at all. I find what feels good with my body, and my body likes warm foods. I do, although, like to keep between 60% and 80% of my diet raw, which includes fruits, vegetables, nuts, etc.
So one of my main fascinations with the raw food diet, is the raw desserts. Oh my goodness me! have I seen some A-M-A-Z-I-N-G creations! I got incredibly inspired, and created this super delicious raw vegan cheesecake, which sent my taste buds on a high of note! Continue reading
