Mango Coconut CHIA Tarts and Summer Mocktails

I walk through the isles of our local Fresh Choice store and am always enticed when I discover a new product on the shelves. Recently there’s been a few popping up and I especially got excited about the launch of CHIA’s new range of gorgeous drinks. Just in time for summer, the lovely CHIA team have release 4 new flavors of their ever popular CHIA range.

As you all know, I am super keen on supporting local businesses, and CHIA is definitely one of them! CHIA is a Nelson based company that is all “about adventure and the outdoors, good food, and living a balanced sustainable lifestyle.”

Peppermint Matcha Truffles

There is something so divine about chocolate and peppermint. Combined, the two are just such a good pair. These Peppermint Match Truffles were inspired by my recent finding of Organic Pure Pepper Essence, which I grabbed from Organic Foods Nelson.

I get a lot of my ingredients and do a fair bit of my food shopping from this store. I love it and I especially love the fact that whenever I walk in there’s always some new and exciting on the shelves. Continue reading

Coco-Choc Bounty Tarts

Recipes (3)I love everything coconut. From coconut oil to coconut water to freshly cracked whole coconuts! I’m Loco for Coco!!! These delicious Coco-Choc Bounty Tarts have to be one of my favorite recipes! They are so decadent, and the combination of chocolate and coconut is insanely scrumptious! With the added sweet nutty base, these tarts are like the average bounty bars (minus the bad stuff, loaded with good stuff) and taken to a whole other level!

Feijoa and Coconut Muffins

Experimenting in the kitchen with different fruits can be exciting and challenging. For me, playing with the New Zealand Feijoa fruit has been incredibly fun. Coming from South Africa, I had never ever heard of such fruit, never mind tasting it. So I was ‘over the moon’ excited to try out this cute little odd shaped fruit, especially being someone who loves trying different fruits and vegetables. I instantly fell in love with the flavor, and that was me, hooked 🙂 So you can imagine how happy I was when a lovely friend blessed me with a whole bag full of the funny little fruits, straight off the tree from her friends farm. So incredibly grateful was I!

Having literally zero carbon footprint, and falling into the ‘eat local’ where possible category, I had to put my thinking cap on to decide what I’d make with so many delicious Feijoa’s. I came up with a tasty muffin recipe. Coconut Brown Rice Bowl & Avocado a La Creme Dressing

Copy of Recipes (11)I was so ‘over-the-moon happy’ when I experimented with making this rice dish, as it turned out so damn tasty! If you’re new to healthy eating, you’ll agree that sometimes brown rice can taste a bit bland and husky.  I decided to mix things up a bit and see if I could make brown rice more palatable to those who aren’t used to it. I, myself, absolutely love the taste of brown rice, but I know for some it can be difficult to change and adapt to healthy eating, and so I’m here to make it that much easier for you 🙂

Okay, so the trick with this dish, as you may have already guessed, is the coconut rice. I achieved this by slowly cooking brown rice with half quantities of water and coconut cream. Granted I did use a rice cooker, but slow cooked on a stove top will also work fine. Continue reading
