I am so excited to share this recipe with you guys, and I had such fun creating it. I find it so amazing how you can create something so decadent, beautiful and delicious with only a handful of ingredients. This recipe is perfect for breakfast and easily prepared the night before or spruce it up for a jaw dropping dessert.
The most exciting part of this recipe was the discovery of the Chocolate Raspberry Mousse. These last few weeks I’ve been mixing up my diet a little, and opting for a more ‘high-fat/low-carb/keto‘ approach. I can honestly say that I’ve felt such a difference in only a short period of time. Initially the whole idea seemed a little out of balance to me. However having done more research into this way of eating (and feeling some the benefits), I’ve been pleasantly surprised.

I must admit, I was a bit apprehensive about this recipe, and how it would turn out. The thought of combining green tea with porridge did seem rather strange, but my curiosity got the better of me and I’m so glad it did. I was so lucky enough to receive this Repower Green Tea from Artemis, and that was it! Inspiration levels were high and the ball began rolling in the direction of a recipe success!
I’ve loved green tea from the first time I tasted it, and I believe it really helped to boost my metabolism and curb my taste buds when I initially started my health journey. It would be my go to drink wherever we were. A substitute that would be my crutch, contributing to my health at the same time. Mornings have to be one of my favorite times of the day, especially when they involve pancakes! For the majority of the time, I tend to have easy stuff for breakfast, like smoothies, smoothie bowls, porridge or granola/muesli, but occasionally I’ll sneak in a “treat breakfast”, and recently it was these tasty Chocolate Banana Pancakes.

It’s always so interesting to see what other people eat, when they eat, and how much they eat. Interesting to me that is! And I also find inspiration in the creativity of the food that people eat.
Food is so personal. It can tell a story. It can tell you about a persons culture, what they were craving, what they enjoy. So intimate! Food sustains us and nourishes not only our bodies, but our minds. It reminds us of people, places and spaces in time, shaping our memories and our cultural heritage. I have been dying to get a waffle maker for ages now, and it finally happened! So you can guess who’s recently been having waffles galore! It’s so nice to experiment and try foods that you wouldn’t normally eat. Though of course these still fall between the lines of being gluten free, refined sugar free, healthy and vegan.

Sunday 31 July marks the 5th year I’ve been
living thriving with Type 1 Diabetes (My Diaversary). It seems like just the other day I was embarking on my wellness journey, after being admitted into ICU and subsequently diagnosed with Type 1 Diabetes. What a journey it has been!

These 5 years have been so full! Full of learning, full of managing, full of adapting, full of growing, full of life! Quinoa has to be one of my favorite grains! (that technically is not a grain but in fact a seed!) It’s versatility alone makes it extremely favorable and it’s almost nutty flavor adds is so delicious. Be it breakfast, lunch or dinner this Aztec ‘superfood’ can be paired with a variety of foods. I decided to create an updated Quinoa Porridge recipe and share how I’ve been loving this grain in the mornings.
I’ve found it gives me so much more energy than say regular oats, and I think gluten may be one of the reasons. I tend to tolerate oats, but have noticed quite a difference in my overall energy levels and brain clarity when comparing the two breakfasts.
