Antioxidant Green Tea Porridge

I must admit, I was a bit apprehensive about this recipe, and how it would turn out. The thought of combining green tea with porridge did seem rather strange, but my curiosity got the better of me and I’m so glad it did. I was so lucky enough to receive this Repower Green Tea from Artemis, and that was it! Inspiration levels were high and the ball began rolling in the direction of a recipe success!

I’ve loved green tea from the first time I tasted it, and I believe it really helped to boost my metabolism and curb my taste buds when I initially started my health journey. It would be my go to drink wherever we were. A substitute that would be my crutch, contributing to my health at the same time. This Antioxidant Green Tea Porridge recipe brought back all those memories, and reminded me of how strong willed I was. Chocolate Banana Pancakes

Mornings have to be one of my favorite times of the day, especially when they involve pancakes! For the majority of the time, I tend to have easy stuff for breakfast, like smoothies, smoothie bowls, porridge or granola/muesli, but occasionally I’ll sneak in a “treat breakfast”, and recently it was these tasty Chocolate Banana Pancakes.

There are so many diets or ways of eating out there at the moment, it can be quite over whelming. Which one do I try? How do I know what’s right for me? Where do I start? From vegetarian to paleo. From vegan to celiac to intermittent fasting. There are so many options and so much information which can make transitioning to a healthier lifestyle so daunting.

What I Eat in a Day + VIDEO

I’ve seen loads of blog posts on this topic and have watched a few Youtube videos too, and they always tend to inspire me and spark ideas, so I thought it’s definitely time for me to share what my nourishment looks like in a day. 

It’s always so interesting to see what other people eat, when they eat, and how much they eat. Interesting to me that is! And I also find inspiration in the creativity of the food that people eat.

Food is so personal. It can tell a story. It can tell you about a persons culture, what they were craving, what they enjoy. So intimate! Food sustains us and nourishes not only our bodies, but our minds. It reminds us of people, places and spaces in time, shaping our memories and our cultural heritage. It’s so nice to experiment and try foods that you wouldn’t normally eat. Though of course these still fall between the lines of being gluten free, refined sugar free, healthy and vegan.

Sunday 31 July marks the 5th year I’ve been living thriving  with Type 1 Diabetes (My Diaversary). It seems like just the other day I was embarking on my wellness journey, after being admitted into ICU and subsequently diagnosed with Type 1 Diabetes. What a journey it has been!

Although here I discuss my condition and while it is a serious subject, I wanted to balance this post by sharing this celebratory Blueberry Chickpea Flour Pancake recipe, that is truly so delicious!!!

These 5 years have been so full! Full of learning, full of managing, full of adapting, full of growing, full of life! Each day has unfolded with new challenges, which in turn have allowed me to grow so much! Breakfast Quinoa Porridge

Copy of Recipes (6)Quinoa has to be one of my favorite grains! (that technically is not a grain but in fact a seed!) It’s versatility alone makes it extremely favorable and it’s almost nutty flavor adds is so delicious. Be it breakfast, lunch or dinner this Aztec ‘superfood’ can be paired with a variety of foods. I decided to create an updated Quinoa Porridge recipe and share how I’ve been loving this grain in the mornings.

I’ve found it gives me so much more energy than say regular oats, and I think gluten may be one of the reasons. I tend to tolerate oats, but have noticed quite a difference in my overall energy levels and brain clarity when comparing the two breakfasts. Banana Millet Porrdige

If you hadn’t already noticed, I’m a massive fan of porridge. This vegan Banana Millet Porridge recipe definitely hits the spot! There’s nothing quite so comforting as a warm, delicious bowl of porridge on chilly winters mornings, and boy! have we had a few of those here in Nelson, NZ. Opening the curtains to see the heavy snow capped mountains in the distance is my que to get the stove on and get cracking with a bowl of nourishing porridge.

My previous porridge post was Breakfast Banana Oats which is a delicious and satisfying recipe, but due to the gluten content on oats, I don’t get into the habit of eating oats too often, well I try not to anyway 😉 I, myself, don’t have any major reactions to gluten, but aside from oats, I tend to keep a gluten free diet. I can definitely feel a difference when I eat something with gluten in it, so for this reason I steer clear of it, with the exception of oats 😉 Continue reading

Banana Breakfast Oats

Breakfast has to be one of my favorite meals of the day! And I’ll admit, I am such a creature of habit, and tend to have a handful of breakfast recipes which I juggle and alternate from. Obviously making them each unique with various different toppings, or what ever is in hands reach in the cupboard. Now, in South Africa I used to frequently buy gluten (wheat) free oats, but am battling to find them here in Nelson. I don’t have a gluten sensitivity, but I choose not to eat gluten containing foods often as I know the health implications. That being said my diet is pretty much gluten free, aside from oats (organic) every now and then. This breakfast oats recipe is one of my all time favorites!!!
