Slow cooked, aromatic bolognese is one of the ultimate comfort foods. When you’re craving something dense and wholesome, this is a favorite for many! However, for some it can leave the digestive system feeling burdened rather than nourished.
So, I decided to put my own twist of this Italian classic, substituting ground beef for lentils, and dense pasta (which is iconic for a bolognese dish) for butternut squash noodles.

These past few weeks have been so busy, I’m slowly settling back into my normal routine. These Sweet Potato Fries are one of the quick and easy meals/side dishes I’ve been making while being so occupied.
At the end of June I flew to Auckland for training and stayed in the most posh hotel. Truly felt like royalty and the view of the city skyline was incredible.
We then had a friend over from South Africa at the beginning of July and had an amazing three weeks exploring this beautiful country with him. In the midst of Winter, one cannot resist complete comfort food! This urge for complete belly euphoria inspired me to create a vegan version of a rather popular dish – Risotto! I cannot believe how great this recipe turned out! As I write this it’s a cold and miserable day outside and all I can think about is having one more forkful of this truly scrumptious meal!

Although Winter is inevitably on it’s way, and actually should be here already, I thought it a good idea to squeeze out one last salad recipe. A ‘farewell to Summer’ recipe as you may, and this one is yummy and experiments with different taste combinations.
The subtle, dry aroma and a slightly minty flavor of the Thyme, blends quite beautifully with the attractive sweet flavour of the pineapple. It’s an odd combination, but it works! and this Rice Noodle Salad with Pineapple Thyme dressing proves that! Continue reading
As the days get shorter and the mornings get darker, I can feel the changes in the weather. Although subtle, the crisp cooler air in the mornings is becoming more apparent, and I can feel the seasons shifting. In a way I am glad. I’m not particularly fond of the cold, but I am grateful for balance, even in nature. It allows me to appreciate the warmth of Summer and for that I am grateful. Life is all about balance, and so why not embrace the balance of nature.
With that said, I had been craving something nourishing, dense and filling. A dish of substance and bold flavors, one that would satisfy every taste bud. And so I stumbled upon a mixture of wild rice, and was instantly inspired. A warming, fueling bowl of hearty soup was born. Now I tend to enjoy my soup smooth, and blended to a fine puree, but in this instance I decided to step out of my comfort zone, and relish in a chunky flavorsome bowl of Mixed Herb Lentil and Wild Rice Soup, and my oh my! A goodie was created! 😉
Can we just all stop for one second, and revel in the news that ‘Plant-Based Food’ is named a top trend for 2016. Say What??? I mean, HELL YEAH!!!! It’s about time!!! This little snippet of information has got me super excited, and happy that more and more people are opting for a plant based lifestyle. This is amazing, and I’m so thrilled as I truly do believe it is the way forward! The fact that more awareness is being steered towards nourishing wholefoods, and lifestyles free from animal products is so inspiring!
