In the midst of Winter, one cannot resist complete comfort food! This urge for complete belly euphoria inspired me to create a vegan version of a rather popular dish – Risotto! I cannot believe how great this recipe turned out! As I write this it’s a cold and miserable day outside and all I can think about is having one more forkful of this truly scrumptious meal!

Although Winter is inevitably on it’s way, and actually should be here already, I thought it a good idea to squeeze out one last salad recipe. A ‘farewell to Summer’ recipe as you may, and this one is yummy and experiments with different taste combinations.
The subtle, dry aroma and a slightly minty flavor of the Thyme, blends quite beautifully with the attractive sweet flavour of the pineapple. It’s an odd combination, but it works! and this Rice Noodle Salad with Pineapple Thyme dressing proves that! Continue reading
As the days get shorter and the mornings get darker, I can feel the changes in the weather. Although subtle, the crisp cooler air in the mornings is becoming more apparent, and I can feel the seasons shifting. In a way I am glad. I’m not particularly fond of the cold, but I am grateful for balance, even in nature. It allows me to appreciate the warmth of Summer and for that I am grateful. Life is all about balance, and so why not embrace the balance of nature.
With that said, I had been craving something nourishing, dense and filling. A dish of substance and bold flavors, one that would satisfy every taste bud. And so I stumbled upon a mixture of wild rice, and was instantly inspired. A warming, fueling bowl of hearty soup was born. Now I tend to enjoy my soup smooth, and blended to a fine puree, but in this instance I decided to step out of my comfort zone, and relish in a chunky flavorsome bowl of Mixed Herb Lentil and Wild Rice Soup, and my oh my! A goodie was created! 😉
Can we just all stop for one second, and revel in the news that ‘Plant-Based Food’ is named a top trend for 2016. Say What??? I mean, HELL YEAH!!!! It’s about time!!! This little snippet of information has got me super excited, and happy that more and more people are opting for a plant based lifestyle. This is amazing, and I’m so thrilled as I truly do believe it is the way forward! The fact that more awareness is being steered towards nourishing wholefoods, and lifestyles free from animal products is so inspiring! Prior to moving to New Zealand, I had never tasted Tempeh before. I’d heard of it, but never really knew what it was. All I knew was that it was foreign and really hard to come by in KZN, South Africa. Well, to be honest, I hadn’t really ever searched for it before, so that previous sentence could possibly be inaccurate. Anyway, upon moving to a new exciting country, came along a lot of exciting new foods, and Tempeh has been one of them.
The ‘Sushi train’ has been an undeniable ‘hit’ in mainstream modern society for quite some time now. Over the last decade is has exploded globally, with Sushi restaurants and takes outs popping up all over the place, with local supermarkets jumping on board and stocking the prepacked containers for our ease.
Such a delightful finger food (as I still have not mastered the art of chop sticks), and so appealing to the eye, I set out to recreate a healthier vegan version, based along similar principles of the traditional Japanese sushi.

This fennel salad is so easy to throw together and would be a great idea to use up brown rice from the night before. I don’t know about you guys, but I’m ALWAYS cooking too much rice. Can never get the quantity spot on, not that I’m complaining of course, or else I wouldn’t have come up with this tasty recipe! The fennel really gives a great, strong flavor to the dish, and compliments the surrounding flavors. Curries and warming stews tend to become rather frequent in the colder winter months, and I like to try a variety of spice blends, to mix things up and find new favorites. This recipe quickly became one of those favorites, so I’d love to share it with you.
