Coffee! One of the most popular drinks in the world. Most cannot start a day without it. When I’m out and about I tend to drink decaf, however a shot of caffeine every now and then is okay. I can definitely feel the effects of caffeine, maybe as I’ve become more sensitive to it.
To be honest, I never really feel that great after having a coffee – be it decaf or regular, yet in the moment it always seems like a good idea.
Recently I’ve been cutting out soy from my diet, so I’ve been having my decaf cappi’s with almond milk, which is pretty tasty! Although I still feel rather flat after drinking one, so I don’t have them too regularly.
But here, in this Chocolate Espresso No Bake Brownie recipe, I decided to use full caffeine coffee for the intense flavor. That, and the fact that Nick’s coffee machine makes a pretty darn good espresso! 🙂 Continue reading
I was recently invited to speak at Revolution – Women Empowering Women, which was a charity event in Nelson. The event was in aid of raising funds for the wonderful Whole Lotta Life foundation which was founded by Kristine Paterson in 2013. This foundation aims to provide those diagnosed with cancer between the ages of 20-45yrs a community filled with knowledge, guidance, hope and support.
It aims to give people what they need – a community with support and access to information that’s related to them specifically. This foundation raises funds for retreats where inspiration flows and hope is restored. It’s such a great cause and it was such an honor to be involved. Continue reading

Rolling on from my post last week, where I shared a neat Infographic explaining some of the nutritional health benefits of popular culinary herbs, this week I decided to add a little bit of mint to my diet. I don’t often use mint to be perfectly honest, mainly because I seem to forget about it. Does that ever happen to you with certain foods? Lately I’ve been feeling rather nostalgic. I’ve been reminiscing old memories and missing my family, friends and home country. It’s now been roughly 17 months since I opened my wings, flew out of Durban South Africa, and nestled into a new life with my love in this beautiful country, New Zealand. I have loved every single step of my journey and am incredibly grateful each and every day. Yet I do think of my ‘people’ back home ALL the time and miss them all so dearly!
So to cheer my spirits I decided to get back to my roots, and create a healthy vegan version of a great South African traditional dessert. It’s wonderful how food is able to have an influence on our feelings, frame of mind and moods. And when it’s a healthy guilt free dessert, it’s even better.
