It’s Easter weekend and I’m slowly slipping into this well awaited break/4 day weekend. I can’t quite believe that we’re a third of the way through the year already, but I’m feeling happy with how this year is shaping out. We have an exciting trip back to South Africa planned in October, which I am so happy about. I cannot wait to see my family and friends.

Mornings have to be one of my favorite times of the day, especially when they involve pancakes! For the majority of the time, I tend to have easy stuff for breakfast, like smoothies, smoothie bowls, porridge or granola/muesli, but occasionally I’ll sneak in a “treat breakfast”, and recently it was these tasty Chocolate Banana Pancakes.

How I’ve Stayed Refined Sugar Free for 6 Years

This year will mark the 6th year of being refined sugar free. After being diagnosed with Type 1 Diabetes I radically changed my diet and lifestyle, and eliminated refined sugar, highly processed foods, along with gluten, dairy and animal products (in the last couple of years). I went cold turkey initially, and I can say that this option is probably not the best for most, but it worked for me at the time. 

I implemented rigid ‘rules’ concerning my diet and deciphered what I could and would not eat. I did my research (extensively) and made personal decisions according to how I felt and what effect certain foods had on me and my body. These days, however, I am not as ‘strict’ as I used to be and have tilted towards a more kinder approach to my diet and the foods I eat. Continue reading

Although summer hasn’t really made a huge appearance yet this year, there have been some pretty warm days, and a sneaky little refreshing (and healthy) popsicle is such a great “after dinner treat”. Let’s get to the good stuff! This recipe is seriously so quick, and only needs 4 ingredients! Yup, ONLY 4! The process is so simple too, blend and set in the freezer overnight! Who would have thought these creamy, subtly sweet pops could be so affordable and easy to make! I was inspired by a friends lovely mum, who actually made some with rooibos tea and mixed fruit. Chocolate Espresso No Bake Brownies

Copy of Recipes (9)Coffee! One of the most popular drinks in the world. Most cannot start a day without it. When I’m out and about I tend to drink decaf, however a shot of caffeine every now and then is okay. I can definitely feel the effects of caffeine, maybe as I’ve become more sensitive to it.

To be honest, I never really feel that great after having a coffee – be it decaf or regular, yet in the moment it always seems like a good idea.

Recently I’ve been cutting out soy from my diet, so I’ve been having my decaf cappi’s with almond milk, which is pretty tasty! Although I still feel rather flat after drinking one, so I don’t have them too regularly.

But here, in this Chocolate Espresso No Bake Brownie recipe, I decided to use full caffeine coffee for the intense flavor. That, and the fact that Nick’s coffee machine makes a pretty darn good espresso! 🙂 Continue reading
