The dark ‘chocolatey’ goodness compliments the natural sweetness of the raspberries so incredibly well 🙂 It’s tough making these little treats last! Yup, they’re just that good!

Cinnamon Spiced Muffin Cookies

Recipes (1)As I write this post, I’m finishing off a cup of delicious hot cinnamon spiced tea, that I have recently fallen in love with. I picked some up from The Hollow, Nelson and it’s this tea blend that I used in these cinnamon spiced muffin cookies. The tea has a very strong aroma of cinnamon, spices and cloves. I love this tea for a treat, as it is naturally very sweet, however I’ve found that the cinnamon sorts out any blood sugar fluctuations. Once a pot of this is brewing, you can’t resist scoffing on some sort of delicious treat, and that’s where these ‘muffin cookies’ shine! Continue reading

Zucchini Banana Bread

Recipes (4)I’ve been craving banana bread for quite some time now. I absolutely love it!!! I actually don’t know why it’s taken me so long to make some, but I found some inspiration, and this recipe was born. I wanted to boost the nutritional value of the loaf so, using a zucchini I had already in the fridge, I grated it and added it in. The great thing is that it really doesn’t alter the taste whatsoever. Adding vegetables into baked goodies is a great way to sneak those veggies into those fussy eaters diets 😉  Continue reading

These delicious Coco-Choc Bounty Tarts have to be one of my favorite recipes! They are so decadent, and the combination of chocolate and coconut is insanely scrumptious! With the added sweet nutty base, these tarts are like the average bounty bars (minus the bad stuff, loaded with good stuff) and taken to a whole other level!

Chewy Granola Bars

Granola Bars! Best! Things! Ever! For me, being a Type 1 Diabetic, my sugar levels can sometimes go haywire. There are SO many things that can affect sugar levels. Hormones, periods, exercise (or lack thereof), coffee, insufficient sleep, out of routine meals, stress, and the list goes on and on. Through ups and downs, it can be a real roller coaster. The joys of Type 1!!! For me, sugar lows are the worst, and the scariest as they can drop so low so quickly, and that’s when you need something like these delicious chewy granola bars to pick them back up, and sustain your levels, without causing them to spike.

Chocolate Energy Bliss Balls

Our lives are busy, and without even realizing it, they are super fast paced. Think about it – where the hell did July go?? In a blink it was gone! So, time fly’s by so quickly, we really need to try and make the most of every moment. The best way to do this is to have high energy levels, so that we have the ability to live our lives to the fullest. I believe that diet and lifestyle play a huge role in sustained energy, and this recipe is definitely one to get those energy levels up (and keep them there) when you need it.

Black Bean Peanut Butter Brownies

Oh! My! Goodness! Who knew you could create the most amazing textured, gooey brownies with … wait for it … BLACK BEANS!!!!! It’s insane! But soooooo good!!!! Now I must say, I am definitely one for trying out crazy combinations and crazy ingredients, and this one just hit the nail on the head! This could be, possibly, one of my favorite recipes to date! Yes, it’s that good!

Call me crazy, but I get so excited when I discover new and brilliant uses for simple ingredients, such as black beans. From adding beetroot and other root vegetables to healthy treats, to using frozen bananas to create the most creamiest delicious (dairy free and sugar free) ice cream, to using the water in canned chickpeas for making vegan ‘whipped cream’  seems like total madness, but it works!!!!
