I love everything coconut. From coconut oil to coconut water to freshly cracked whole coconuts! I’m Loco for Coco!!! These delicious Coco-Choc Bounty Tarts have to be one of my favorite recipes! They are so decadent, and the combination of chocolate and coconut is insanely scrumptious! With the added sweet nutty base, these tarts are like the average bounty bars (minus the bad stuff, loaded with good stuff) and taken to a whole other level!
Granola Bars! Best! Things! Ever! For me, being a Type 1 Diabetic, my sugar levels can sometimes go haywire. There are SO many things that can affect sugar levels. Hormones, periods, exercise (or lack thereof), coffee, insufficient sleep, out of routine meals, stress, and the list goes on and on. Through ups and downs, it can be a real roller coaster. The joys of Type 1!!! For me, sugar lows are the worst, and the scariest as they can drop so low so quickly, and that’s when you need something like these delicious chewy granola bars to pick them back up, and sustain your levels, without causing them to spike.
I try really hard to manage myself to the best of my ability, but sometimes I don’t always get it right. I’ve realized that being kind to myself is the best treatment, and understanding there are sometimes things I cannot control.
Our lives are busy, and without even realizing it, they are super fast paced. Think about it – where the hell did July go?? In a blink it was gone! So, time fly’s by so quickly, we really need to try and make the most of every moment. The best way to do this is to have high energy levels, so that we have the ability to live our lives to the fullest. I believe that diet and lifestyle play a huge role in sustained energy, and this recipe is definitely one to get those energy levels up (and keep them there) when you need it.
One of the massive things I’ve noticed since I changed my diet and my lifestyle is the huge increase in sustained energy levels. Now don’t get me wrong, we all have ‘those’ kind of days where we can’t be arsed to do anything. Be it hormones or whatever, at the end of the day we are all human. Oh! My! Goodness! Who knew you could create the most amazing textured, gooey brownies with … wait for it … BLACK BEANS!!!!! It’s insane! But soooooo good!!!! Now I must say, I am definitely one for trying out crazy combinations and crazy ingredients, and this one just hit the nail on the head! This could be, possibly, one of my favorite recipes to date! Yes, it’s that good!
Call me crazy, but I get so excited when I discover new and brilliant uses for simple ingredients, such as black beans. From adding beetroot and other root vegetables to healthy treats, to using frozen bananas to create the most creamiest delicious (dairy free and sugar free) ice cream, to using the water in canned chickpeas for making vegan ‘whipped cream’ seems like total madness, but it works!!!! It has been getting rather chilly here in Nelson, New Zealand. Growing up on a farm way out in the Dargle, South Africa, you’d think the cold would have little affect on me. I suppose I’m just a little bit of a wimp these days, brrrrrrr!!!!! Warm baths, comfy PJ’s and lots of cuddles definitely help, but so does a delicious warming meal followed by and even better warming and satisfying healthy dessert. What better way to end of a chilly evening, with a bowl of this delicious apple and sunflower seed crumble!

Experimenting in the kitchen with different fruits can be exciting and challenging. For me, playing with the New Zealand Feijoa fruit has been incredibly fun. Coming from South Africa, I had never ever heard of such fruit, never mind tasting it. So I was ‘over the moon’ excited to try out this cute little odd shaped fruit, especially being someone who loves trying different fruits and vegetables. I instantly fell in love with the flavor, and that was me, hooked 🙂 So you can imagine how happy I was when a lovely friend blessed me with a whole bag full of the funny little fruits, straight off the tree from her friends farm. So incredibly grateful was I!
Having literally zero carbon footprint, and falling into the ‘eat local’ where possible category, I had to put my thinking cap on to decide what I’d make with so many delicious Feijoa’s. The world of raw food is so diverse, and really can be so artistic. I often sit scrolling the internet for inspiration, and my mind is often blown at what people can create with raw food. Now I don’t mean raw as in salmonella raw, I mean food that hasn’t been heated over 47degrees C (I think) and no nutrients or natural enzymes of the food have been damaged due to heat. I myself don’t follow a fully raw diet at all. I find what feels good with my body, and my body likes warm foods. I do, although, like to keep between 60% and 80% of my diet raw, which includes fruits, vegetables, nuts, etc.
So one of my main fascinations with the raw food diet, is the raw desserts. Oh my goodness me! have I seen some A-M-A-Z-I-N-G creations! I got incredibly inspired, and created this super delicious raw vegan cheesecake, which sent my taste buds on a high of note! Continue reading
A couple of posts ago, you’d see our Adventure to Picton, New Zealand, and on this adventure we managed to find a massive stretch of Banana Passion Fruit vines. Now while we were there, there weren’t many to be found, ripe and on the ground. We did, however, find a few and I at least got to taste this delicious fruit for the first time. One of my lovely friends, Lee-Anne, then gave me a bag of them that our trusty tour guide had managed to collect on a trip back up to Picton the following day. The big rainfall from the previous night had helped bring these little gems down to the ground, for us 🙂
With an abundance of these tasty little morsels, I pondered what I could create. A Chia breakfast bowl was the winning thought, and the result was simply scrumptious.
Chia seeds are so awesome! I love them and they’re always a staple in my pantry. There’s just so much you can do with them, and the health benefits are incredible. It’s crazy to think that so much goodness can fit in such a tiny little seed. That’s mother nature for you!
This recipe is so so simple, it’s ridiculous! Now, granted if you’re new to the magical world of chia seeds, the texture is a little different, and for some, takes some getting used to. Continue reading
