Although summer hasn’t really made a huge appearance yet this year, there have been some pretty warm days, and a sneaky little refreshing (and healthy) popsicle is such a great “after dinner treat”. So if you’re looking for a last minute treat for the weekend ahead, I’ve got just the recipe for you. These Chocolate Coconut Popsicles are sure to interest you.

Let’s get to the good stuff! This recipe is seriously so quick, and only needs 4 ingredients! Yup, ONLY 4! The process is so simple too, blend and set in the freezer overnight! Who would have thought these creamy, subtly sweet pops could be so affordable and easy to make! I was inspired by a friends lovely mum, who actually made some with rooibos tea and mixed fruit. Chocolate Espresso No Bake Brownies

Copy of Recipes (9)Coffee! One of the most popular drinks in the world. Most cannot start a day without it. When I’m out and about I tend to drink decaf, however a shot of caffeine every now and then is okay. I can definitely feel the effects of caffeine, maybe as I’ve become more sensitive to it.

To be honest, I never really feel that great after having a coffee – be it decaf or regular, yet in the moment it always seems like a good idea.

Recently I’ve been cutting out soy from my diet, so I’ve been having my decaf cappi’s with almond milk, which is pretty tasty! Although I still feel rather flat after drinking one, so I don’t have them too regularly.

But here, in this Chocolate Espresso No Bake Brownie recipe, I decided to use full caffeine coffee for the intense flavor. That, and the fact that Nick’s coffee machine makes a pretty darn good espresso! 🙂 Continue reading

It’s so nice to experiment and try foods that you wouldn’t normally eat. Though of course these still fall between the lines of being gluten free, refined sugar free, healthy and vegan.

Salted Peanut Butter Cashew Fudge

The event was in aid of raising funds for the wonderful Whole Lotta Life foundation which was founded by Kristine Paterson in 2013. This foundation aims to provide those diagnosed with cancer between the ages of 20-45yrs a community filled with knowledge, guidance, hope and support.

It aims to give people what they need – a community with support and access to information that’s related to them specifically. This foundation raises funds for retreats where inspiration flows and hope is restored. It’s such a great cause and it was such an honor to be involved. Continue reading

Lemon Poppy Seed Muffins

Copy of Recipes (6)With the apparent abundance of lemons this time of year, I’ve been incorporating as much lemon into my diet as possible. Whether it be squeezed freshly over a salad, or juiced and frozen into ice blocks for a refreshing glass of sparkling water. It hasn’t been difficult because I love lemons, and use them so regularly. They’re amazingly good for you, as I’ll discuss a little later on.

So, while searching for inspiration, this Lemon Poppy Seed Muffin recipe was created, and I incorporated the ever so delicious Vanilla Cashew Glaze. This creamy sweet concoction paired so well with the zesty lemon muffins ending in a recipe success. Continue reading
