Coffee! One of the most popular drinks in the world. Most cannot start a day without it. When I’m out and about I tend to drink decaf, however a shot of caffeine every now and then is okay. I can definitely feel the effects of caffeine, maybe as I’ve become more sensitive to it.
To be honest, I never really feel that great after having a coffee – be it decaf or regular, yet in the moment it always seems like a good idea.
Recently I’ve been cutting out soy from my diet, so I’ve been having my decaf cappi’s with almond milk, which is pretty tasty! Although I still feel rather flat after drinking one, so I don’t have them too regularly.
But here, in this Chocolate Espresso No Bake Brownie recipe, I decided to use full caffeine coffee for the intense flavor. That, and the fact that Nick’s coffee machine makes a pretty darn good espresso! 🙂 Continue reading
I have been dying to get a waffle maker for ages now, and it finally happened! So you can guess who’s recently been having waffles galore! It’s so nice to experiment and try foods that you wouldn’t normally eat. Though of course these still fall between the lines of being gluten free, refined sugar free, healthy and vegan.
Experimenting and creating different dishes, trying new ingredients, and really just having fun with your food can be so rewarding, especially if you know that the food you’re eating is doing your body a whole lot of good (as well as your mind 😉 ) Continue reading
I was recently invited to speak at Revolution – Women Empowering Women, which was a charity event in Nelson. The event was in aid of raising funds for the wonderful Whole Lotta Life foundation which was founded by Kristine Paterson in 2013. This foundation aims to provide those diagnosed with cancer between the ages of 20-45yrs a community filled with knowledge, guidance, hope and support.
It aims to give people what they need – a community with support and access to information that’s related to them specifically. This foundation raises funds for retreats where inspiration flows and hope is restored. It’s such a great cause and it was such an honor to be involved. Continue reading
With the apparent abundance of lemons this time of year, I’ve been incorporating as much lemon into my diet as possible. Whether it be squeezed freshly over a salad, or juiced and frozen into ice blocks for a refreshing glass of sparkling water. It hasn’t been difficult because I love lemons, and use them so regularly. They’re amazingly good for you, as I’ll discuss a little later on.
So, while searching for inspiration, this Lemon Poppy Seed Muffin recipe was created, and I incorporated the ever so delicious Vanilla Cashew Glaze. This creamy sweet concoction paired so well with the zesty lemon muffins ending in a recipe success. Continue reading
There is something so divine about chocolate and peppermint. Combined, the two are just such a good pair. These Peppermint Match Truffles were inspired by my recent finding of Organic Pure Pepper Essence, which I grabbed from Organic Foods Nelson.
I get a lot of my ingredients and do a fair bit of my food shopping from this store. I love it and I especially love the fact that whenever I walk in there’s always some new and exciting on the shelves. Continue reading

I don’t know where you are in the world right now, but it’s getting pretty chilly where I am! Winter is most certainly evident in Nelson, and the snow capped mountains in the distance, that greet me every morning, are a sure sign that the seasons have changed and colder times are on the way!
And along with the chilly mornings and darker afternoons, come the subtle effects or ‘symptoms’ of the changing seasons. May it be a snuffled nose, a sneeze, a cold or the flu, winter likes to let us know it’s here! So I’ve created these Turmeric Ginger Slices that will not only boost your immune system to harp you from getting these symptoms, but will make it super easy and quick to stopping them in their tracks! Rolling on from my post last week, where I shared a neat Infographic explaining some of the nutritional health benefits of popular culinary herbs, this week I decided to add a little bit of mint to my diet. I don’t often use mint to be perfectly honest, mainly because I seem to forget about it. Does that ever happen to you with certain foods? You’ll forget about them for ages and then one day realize ‘Oh yeah! I forgot about that! I haven’t had that in ages!’
Anyway, I spotted some fresh mint in store and it quickly found it’s way into my shopping basket.
There’s nothing quite like sinking your teeth into a moist, rich and decadent chocolate brownie! With the subtle texture of crushed walnuts to add the explosion of your senses, this recipe for Chocolate Walnut Brownies is sure to inspire you to pull up your sleeves, get busy in the kitchen and create these squares of complete awesomeness as soon as possible!
They’re gluten free, so won’t be upsetting any tummy’s, and are loaded with nutritional goodness! And people say vegan/vegetarian food is boring/tasteless. Pft!?! They obviously haven’t tried these brownies, and many of the amazing vegan recipes you can find today. Continue reading
From porridge, to health bars to bulking up veggie burger patties, there’s just so much you can do with this grain. Which grain is that you wonder? I’m talking about oats!
I think (if you can tolerate and digest it), oats has to be one of the main essentials in a healthy kitchen pantry. It’s always great to have on hand and is so versatile it can be used in a wide variety of foods. These Cinnamon Oat Biscuits are a fine example of what you can create, by using this humble grain.
