Chickpeas have to be one of my favorite staples in the kitchen. They’re so handy to have – whether they be dry and stored in a glass jar, soaking over night on the kitchen counter, sprouting in my ceramic colander under a kitchen cloth or organic tinned chickpeas in bpa-free tins, tucked away in the pantry. There’s so many beautiful recipes to make with these little legumes, and they make such delicious additions to simple summer salads to roasted vegetable platters to creamy hummus.
A great source of dietary protein, chickpeas are a great addition to any plant based diet. They’re pretty easy to prepare, are loaded with all sorts of great nutritional values and are really fulling. I especially love this Roasted Parsnip Hummus recipe, and may be slightly addicted to it! Food is so personal. It can tell a story. It can tell you about a persons culture, what they were craving, what they enjoy. So intimate! Hope you’re all easing into the New Year well. It’s been beautiful weather here in Nelson. The sun’s been shining brightly these last couple days and the cool, refreshing breeze has been a breath of fresh air. I love this time of year, so much! I love getting out on the weekends, going on unknown adventures, and being immersed in nature. The sun kissed glow to the skin is always welcomed.
We met up with a gorgeous friend at the Nelson Saturday Market on the weekend (which was fab), and I stumbled across some deliciously fresh hazelnuts which I just had to have. Now, I must admit, I may have a mild obsession with this particular nut. Healthy snacks are a great addition to any diet. Be it low carb, high carb, paleo, vegan or whatever you choose, healthy snacks are perfect to curb hunger and cravings throughout the day.
They also give you a great nutritional boost which is always a good thing. The more nutrients the better! As I like to get all my nutrition and nutrients from the food I eat, so the more I can get, the better! One particular healthy snack ingredient is flax!
I’m a huge fan of flax. Be it ground or whole, flax is so versatile and is always a staple in my pantry. I generally use ground flax, and am careful to keep it in the fridge in an airtight container after opening to avoid rancidity. Continue reading
Well! I’ll start this blog off by saying it’s been a rather intense week! While I’m super excited to share this Vegan Tofu Scramble recipe with you, I’ll give you my brief summary of my experience of the recent earthquake/s.
If you haven’t heard already, New Zealand had a 7.8 Earthquake at a little past 12am early Monday morning. I awoke abruptly to Nick shaking me and instantly I knew what was going on. The earth was moving. Our whole house was shaking, and so vigorously that the water in the toilet was loudly swishing from side to side. Instant panic mode!
My first instinct was to run outside, yet in my fumbled orientation, I actually didn’t know what to do. And then the electricity went out, all was black, frightening! We experienced one last real jolt, and then it simmered down. We later learnt that the quake went on for around 2mins, which is a freaking long time when you’re in a situation like that.
