Chocolate Raspberry Mousse Chia Pudding

I am so excited to share this recipe with you guys, and I had such fun creating it. I find it so amazing how you can create something so decadent, beautiful and delicious with only a handful of ingredients. This recipe is perfect for breakfast and easily prepared the night before or spruce it up for a jaw dropping dessert. 

The most exciting part of this recipe was the discovery of the Chocolate Raspberry Mousse. When the ‘coconut milk soaked’ chia seeds are blended with raw cacao, frozen raspberries and a sweetener of your choice, the most decadent perfect textured mousse is created. Stop it! I know! I was browsing and searching for something creative to make for dinner. Something that I could make for Nick and I, and something that was easy and at the same time, delicious! 

I stumbled across this Rainbow Thai Noodle Salad with Peanut Lime Dressing recipe from the Little Spice Jar blog. I was looking on here to find a recipe that Nick would enjoy, that I could either substitute the meat/ make it vegan friendly. Yes, this may include experimenting with certain foods and ways of eating, but ultimately it’s finding what feels good and what makes you happy and full of energy. Chia & Flax Seed Breakfast Bowl

These last few weeks I’ve been mixing up my diet a little, and opting for a more ‘high-fat/low-carb/keto‘ approach. I can honestly say that I’ve felt such a difference in only a short period of time. Initially the whole idea seemed a little out of balance to me. However having done more research into this way of eating (and feeling some the benefits), I’ve been pleasantly surprised.

Raspberry and Tahini Puffed Millet Squares + VIDEO

The thing with healthy eating is to be prepared. One way to be prepared is having loads of snacks and healthy treats available to avoid yourself from caving in to unhealthy temptations. That’s why I like to always have ‘ready made’ snacks and treats on hand, to curb those cravings and satisfy them with a healthy alternative that, at the same time, is nourishing my body. 

These Raspberry and Tahini Puffed Millet Squares are such a quick snack/treat option that literally are made in one bowl, popped into the freezer overnight to set and that’s it! Tofu Miso Soup (Vegan)

While there is much speculation around the whole ‘soy’ topic, and the fact that genetically modified soy beans are penetrating more and more of the global soy markets, there are still loads of health benefits in fermented soy products. Containing less anti-nutrients, fermented soy products, like Miso, have an array of nutritional benefits and can have a positive effect on so many bodily systems. 

This Tofu Miso Soup recipe is an example of how fermented soy products can be incredibly delicious, along with reaching high points on the nutrition scale. It is 100% plant based and is seriously such a quick and easy delicious meal that can be thrown together in no time at all.  Continue reading
