With Summer weather making more and more of an appearance, and temperatures rising, I thought it a great idea to post a smoothie recipe. This time of year I feel more inclined to eat less dense heavy foods, and rather opt for salads, steamed greens and smoothies. It’s great to feel light and energized, especially when it’s hot outside.
A regular query, which I’m sure most plant based eaters can relate with, is “Where do you get all your protein from if you don’t eat meat?” And what most don’t understand is that there is an abundance of protein in plants, seeds, grains, etc. All you need is a little education on what to combine in order to get a complete protein profile. Slow cooked, aromatic bolognese is one of the ultimate comfort foods. When you’re craving something dense and wholesome, this is a favorite for many! However, for some it can leave the digestive system feeling burdened rather than nourished.
So, I decided to put my own twist of this Italian classic, substituting ground beef for lentils, and dense pasta (which is iconic for a bolognese dish) for butternut squash noodles.
With the addition of a creamy vegan white sauce, the result was a deeply flavored dish with a creamy twist, all elements complimenting each other perfectly! Continue reading
Coffee! One of the most popular drinks in the world. Most cannot start a day without it. When I’m out and about I tend to drink decaf, however a shot of caffeine every now and then is okay. I can definitely feel the effects of caffeine, maybe as I’ve become more sensitive to it.
To be honest, I never really feel that great after having a coffee – be it decaf or regular, yet in the moment it always seems like a good idea.
Recently I’ve been cutting out soy from my diet, so I’ve been having my decaf cappi’s with almond milk, which is pretty tasty! Although I still feel rather flat after drinking one, so I don’t have them too regularly.
But here, in this Chocolate Espresso No Bake Brownie recipe, I decided to use full caffeine coffee for the intense flavor. That, and the fact that Nick’s coffee machine makes a pretty darn good espresso! 🙂 Continue reading
