This fennel salad is so easy to throw together and would be a great idea to use up brown rice from the night before. I don’t know about you guys, but I’m ALWAYS cooking too much rice. Can never get the quantity spot on, not that I’m complaining of course, or else I wouldn’t have come up with this tasty recipe! I absolutely loved this little adventure up Takaka Hill (New Zealand). We woke up early, filled our bellies, and set off. In the middle of winter, you can imagine how crisp and chilly the morning air was, but it was magical.
We took a relaxed drive through Richmond, Motueka and Riwaka, and at the bottom of Takaka Hill we stopped to take a look at the river. The frost covered ground was absolutely stunning!
There’s something about a chilly winters morning that can invigorate and awaken you, well it does for me. The fresh air is somewhat energizing, and this energy fueled my excitement for the rest of the trip.
The grass and plants were covered in the most beautiful frost! Really so beautiful to capture! Mother nature never ceases to amaze me with her brilliance. Continue reading
Granola Bars! Best! Things! Ever! For me, being a Type 1 Diabetic, my sugar levels can sometimes go haywire. There are SO many things that can affect sugar levels. Hormones, periods, exercise (or lack thereof), coffee, insufficient sleep, out of routine meals, stress, and the list goes on and on. Through ups and downs, it can be a real roller coaster. The joys of Type 1!!! For me, sugar lows are the worst, and the scariest as they can drop so low so quickly, and that’s when you need something like these delicious chewy granola bars to pick them back up, and sustain your levels, without causing them to spike.
I try really hard to manage myself to the best of my ability, but sometimes I don’t always get it right. I’ve realized that being kind to myself is the best treatment, and understanding there are sometimes things I cannot control.
If you hadn’t already noticed, I’m a massive fan of porridge. This vegan Banana Millet Porridge recipe definitely hits the spot! There’s nothing quite so comforting as a warm, delicious bowl of porridge on chilly winters mornings, and boy! have we had a few of those here in Nelson, NZ. Opening the curtains to see the heavy snow capped mountains in the distance is my que to get the stove on and get cracking with a bowl of nourishing porridge.
My previous porridge post was Breakfast Banana Oats which is a delicious and satisfying recipe, but due to the gluten content on oats, I don’t get into the habit of eating oats too often, well I try not to anyway 😉 I, myself, don’t have any major reactions to gluten, but aside from oats, I tend to keep a gluten free diet. I can definitely feel a difference when I eat something with gluten in it, so for this reason I steer clear of it, with the exception of oats 😉 Continue reading
I’d been dying to visit the newly opened tea café/space in Nelson that everyone was talking about. Since changing my lifestyle and diet, herbal tea’s have become a huge part of my life. I love herbal teas! They’re so refreshing and there’s so much you can do with them. From hot drinks, to cool summer ice teas, to even using them in recipes. So many options!!! Hence my excitement for the new tea cafe/store/gallery/event premises The Hollow.
Our lives are busy, and without even realizing it, they are super fast paced. Think about it – where the hell did July go?? In a blink it was gone! So, time fly’s by so quickly, we really need to try and make the most of every moment. The best way to do this is to have high energy levels, so that we have the ability to live our lives to the fullest. I believe that diet and lifestyle play a huge role in sustained energy, and this recipe is definitely one to get those energy levels up (and keep them there) when you need it.
One of the massive things I’ve noticed since I changed my diet and my lifestyle is the huge increase in sustained energy levels. Now don’t get me wrong, we all have ‘those’ kind of days where we can’t be arsed to do anything. Be it hormones or whatever, at the end of the day we are all human.
